If you've never tried pho, I recommend squeezing in some lime juice and mixing in some sriracha sauce directly into the soup. Also, don't eat directly from the bowl. Instead, load up your super large spoon with some noodles, a piece of meat, and a bit of vegetables. Submerge that into the broth, then top it off with a pea sized dollop of hoisin sauce. Now you're ready to shove that spoon packed full of flavors into your mouth!! Not only is it super delicious, but having to repeat this meticulous process will help you pace your meal, leading to healthier digestion. Word of warning: There's only 3 tables for two and a 4-seater countertop inside, so absolutely make sure to come right at opening time or prepare for a potentially long wait. Several waitresses were quite attentive and cheerful. To me, soup is comfort food and nothing beats a bowl of beef pho after a tiring, cold day. The small-ish bowl of dac biet pho had a great beef flavor all the way around. Broth was not too rich and perfect balance of spices (hints of cinnamon, clove, and star anise). The meatballs tasted like beef (not the tasteless, spongy meat mass offered in some US pho restaurants), the brisket pieces were tender, tripe tasted "clean", and the raw beef was sliced thinly enough to give it a nice texture. Only slightly negative thing worth mentioning is that the pho was €20 ($22) for what we would consider a small bowl in the US ... but hey, this is Amsterdam, one of the world's great cities. Several appetizers in the menu. I tried the beef rice paper spring rolls. The rice crepe wrapper was a little too chewy, so next time, I will go with another small dish. Also do not get the banana, coconut dessert. The banana is a dry plantain just sitting in coconut milk. Service: 3/5 I was here with my Dutch classmates and we spoke to the waitstaff in Dutch, but despite the fact we spoke perfectly correct Dutch, they could not understand us and kept talking to us in English. We were the only customers at the restaurant during lunch time. But the server seems to be more focus on playing with her cell phone than serving us. Despite from the poor service from our server, we are still quite looking forward to try out the food. It is a good sign that she brought out bean sprouts, cilantro, chilli and lime on a separate plate. Those are the same ingredients that I used to enjoy the nice Pho from Oregon. It is also very good that the beef is still pink in the middle and not overcook. Some restaurants serve the beef overcooked and that makes a big difference. The salad rolls is okay and nothing too spectacular. The cold noddle is good portion but the rest of the ingredients is just okay. The price for the food is more expensive than other vietnamese restaurant and I am not sure whether it is justifiable considering the service. I may try one more time during normal dinner hours to see whether the service improves.

The shoutouts go to two servers in particular - Fabiola was wonderful at check-out and Tibi gave great suggestions on what to order as it was the first time dining here for my two companions. Fabiola also gave us a frequent visitor card to this Restaurant chain (they have 4 diversified restaurants) and made no issues about splitting the bills, so massive props for that consideration. Food wise, I felt made better choices here too, thanks to Tibi, compared to my previous choices. I ordered nos 121 - Saigon salad rolls and nos410 - roasted spare ribs (less €2.50 without rice). The Salad rolls were okay, but I thought the Papaya salad, which one of my co-diners ordered, took the prize home for the best appetizer. Would absolutely get this again, as the dressing was tart and sweet and perfectly coated the raw papaya beautifully. The Roasted Spare Ribs was also a winner.
