I simply clarified that many places I've been to (in Augusta) do serve it with a sauce. That could have been a moment to politely explain their style instead of making me feel dismissed. Another customer was speaking highly of the gravy on the brown stew chicken, so I asked if I could purchase a side of it. I was told no. I even offered to pay extra, and again was told no--without any effort to accommodate or offer another option. There were no pleasantries, no warmth, and no sense that my business mattered.
