Paccheri Alla Panna with Shrimp
Mary Grace H.

In short: resort hotel restaurant with great ambiance, interior design, and dinnerware; recommend for date night if eating indoors; solid fried calamari dish but meatballs & pasta were mid; decent service I was hesitant to write a review because we really wanted to like this spot. Great ambiance and interior design; I recommend going on a weekday for a quieter evening if that's your preference. If you choose outdoor seating, you could be seated with a pool view filled with people but may/may not be too distracting. Service was quite lacking as we felt like we had to wait for our dishes for a bit and to address our concerns. It seemed that they might have been short staffed. For the appetizers, we ordered the calamari and meatballs. The calamari was perhaps the only highlight of our meal; it was lightly crispy and salted perfectly; complemented with some roasted tomatoes and pickled peppers. So addicting. I'd pass on the meatballs; they had a lot of flavor but the grilled focaccia was way too crunchy and lacked the char flavor. The deal breaker were the pasta dishes. The fettuccine was very bland, resulting in me asking for more cheese and chili flakes. Still didn't really help. For the paccheri dish, the shrimp tasted fresh and sweetly succulent and cream sauce delicious, but some of paccheri were unfortunately undercooked. We notified the server who kindly listened to our concerns. We opted out from dessert but they comped us with a panna cotta with strawberries which I thought was a pleasant treat. The strawberries were fresh and presented nicely. We didn't feel like the dishes and experience were overpriced but unsure if we'd return.

What a lovely and delicious evening

We went to the Convivio which is a special fixed price evening event. It is held outdoors under a planting of olive trees. It is planned to be offered monthly and this month the region of Italy that they focused their menu on was the Amalfi coast. The food was truly fantastic. The setting was beautiful and the staff were helpful and personable. The evening was a total success and highly recommended

Had the most amazing experience at Verise where we had dinner in the Olive Garden and everything from the moment we walked in to the moment we left was absolutely incredible. The food was so good and tasted so fresh. The cheese was locally sourced, the crudo was amazing, the pasta tasted authentic, every dish we had was amazing. Now the service - 15/10. Joanna, Sara, the chefs, musicians, Ritoberto (I may have butchered his name - so sorry) and all the staff serving were so sweet; it felt like a family environment. You could genuinely let your guards down and just enjoy. They absolutely made the experience! I will be back and can't wait!

This place is tucked away behind the flower fields in Carlsbad. Such a cute find! loved the decor, and indoor/outdoor seating. Our server was amazing. She ran through the menu as it was our first time there. We got the table side bread service and a few apps to share. Everything was delicious. My favorite dish was the pomodoro! i would come back just for that dish and a Hugo spritz and be happy! Perfect place to sit and relax enjoy socal weather.

Great food, great atmosphere, aesthetically amazing. However the service could be better. Celebrating a birthday and no one said anything or even offered something at the end. What to avoid - the Steak a bit tough on some areas, the calamari don't get it was hard and chewy and the special parmigiana with truffle which they ran out of penne and only had spaghetti was not worth 48 dollars.

Verise is one of our favorite local secret gems. Being Italian, it is rare for us to eat out Italian. However, we love Verise. It's a beautiful space with delicious food. Great ambiance - very inviting. We have celebrated quite a few special occasions here as well. The outdoor patio is beautiful and there is a garden area you can rent for parties or large groups. The service is always so wonderful. We always have the most kind servers and host staff. We have eaten everything from Brunch to dinner. You don't want to miss this spot.

Mid cut of the not so "New York"
Monica L.

Let me start with the 2 stars goes to our server because she was just the messenger and a very sweet messenger at that (0 from the kitchen and maybe 1 * from the bar after the first lemon drop was sent back then redeemed), what came out of the kitchen had nothing to do with her. Our $68 "New York" was unlike any New York I've ever had elsewhere because there was now way it was a New York and they tried to pass it off as a New York and is a HARD NO! You decide for yourself...if you know what a New York should look and taste like. This was the greatest displeasure as we are just lovers of good food. The place was not busy at all for a Monday night, later in the evening, but still took almost 2 hours. When we arrived around 7:30 we immediately ordered a kids pizza for our granddaughter (we saw the wood fire pizza area and thought, WOW, should be an elevated experience) and it still didn't come out til almost 9pm and was nothing more than what looked and tasted like a heated frozen pizza. Our server took it off the bill because it was so delayed for our 3 year old girl. We ordered the chicken as well and it was delicious itself. Didn't really need the green paste on top but the chicken was juicy and spoke for itself. Would give this place another shot if in the area again but only after some major changes.

Seems like there are tables to me!

It's too bad the restaurant has such a lovey setting because it's largely getting wasted. The remodel is just lovely. They also gutted the staff and hired people that seem less than thrilled to be there. As someone who's been coming here five plus years I'm disappointed. It's a little harsh, but true. If I didn't have the Bonvoy status at the Marriott to get free breakfast I'd skip it entirely to be perfectly honest. The menu isn't bad, just limited. I don't understand why they slashed the epic breakfast tacos from the menu or made the kid menu three items. The hotel is next to LEGOLAND you won't get away from families. What bugs us most is that Every. Single. Time. I've come in this stay the hostess acts like she's slammed and makes us stand there. No one else around. Then tells us to wait in the "lounge" while she finds table. I don't know what genius taught her to do that, but when you can see open tables in a relatively quiet restaurant it's very off putting. Maybe it's her, maybe it's managements dumb idea. I have some pics and a video so you can se for yourself. I decided to update this a bit to be fair.... Dinner is a whole other story. I think they put the A team on dinner. The Chicken Parm is delicious, just odd that it didn't come with any pasta or even a veggie. Still, Very good. The dinner service is definitely better than the breakfast service. Bread service is also unexpectedly delightful. The gnocchi is well prepared and tastes amazing. Again, just served by itself so maybe a broccolini or something would really be nice. Still can't up the stars because breakfast is that much of a bummer. A whole week of days for redemption and there were truly zero days that made me think I was unfair. The nicest person working breakfast is the guy bussing tables, swap him with one of the wait staff.

We were down in Carlsbad for the day and decided to stop by Verise, a modern Italian restaurant inside Hotel Soleil. We went for lunch and really enjoyed it. The atmosphere is super relaxing, especially sitting outside right by the hotel pool. We tried a bunch of dishes, and the Paccheri Alla Panna was easily my favorite. It's a creamy white pasta with peas and ham and everything just worked really well together. The Diavola Piccante Pizza was another standout with spicy salami and ricotta, and the wood-fire roasted meatballs were really good too. They also have a nice drink menu. I went with the Hugo Spritz, which was light, minty, and really refreshing sitting outside by the pool. Overall, the food was solid across the board, and the beautiful hotel and restaurant setting made the experience even better. Would definitely come back next time we're in Carlsbad.

My husband and I stayed at the Hotel Solea for our anniversary and decided to have our anniversary dinner at Verise onsite. We were very happy. It did not disappoint. We sat on the patio and it was beautifully lit up in the evening. Just lovely. The servers were extraordinary and took such great care of us. We started with the focaccia bread (still thinking about it) and calamari. I had the Paccheri alla Panna. Very tasty! My husband had the Fettucine. The server returned to us with a surprise free dessert for our special celebration. So sweet! We also enjoyed the live music! We will definitely be back.

Wow! What a location, it's gorgeous! The decor is so tasteful with a touch of Tuscany! We began with a few starters which would pretty darn good. The meatballs were full of flavor, and the texture was perfect! The fried calamari was good, but the batter was a bit on the heavy side. I had the Gnocchetti Di Patate which was so light and fluffy, the sauce was elegante. My husband had the Tagliata Di Manzo, which he said was delicious and cooked perfectly. Generous portions and priced well. Our server Lucas was extremely efficient, friendly and made our dinner an outstanding experience. The entire staff was wonderful. We can't wait to go back and try new things.

Lunch at Verise was everything. Rooted in Italian tradition with a modern twist, this North country spot is all about gathering, handcrafted pastas, wood-fired creations and seasonal flavors worth slowing down for. Reservations are now open! Don't sleep on this one

Spaghetti pomodoro. Not good.

What a bummer this place was over priced and bad. Was hoping for a good Italian place with cocktails close to home but nope this is just an over priced hotel restaurant and bar. Service was bad and slow and the food was bland. As a starter we ordered the parmigiana balsamico. This was literally just chunks of parmigiana drizzled with balsamic vinegar. No bread or anything else. This was also dropped off to us with no silverware. It took us about 5 min to flag someone down to get some. Our first drink finally came 10 min after our appetizer was dropped (~20 min after ordering) at this time I asked for the wine I ordered. They then brought a Chianti when I ordered a Pinot Grigio. Finally got the right wine maybe 30 min after ordering it. For the main course I ordered the spaghetti pomodoro with burrata. I could have made this at home much better. The sauce had no flavor and there was hardly any burrata. The pasta seemed store bought and was over cooked and barely warm. I had to ask for salt to even be able to eat it. My friend ordered the bucatini and it was so over cooked he wasn't even able to twirl it. The pasta just broke apart. His dish was also cold. I'm not sure if it's just a bunch of influencers reviewing this place or what but I absolutely can't recommend it. The service was non existent and the food wasn't well executed. It was also incredibly loud and hard to hear each other talk so I couldn't even enjoy the ambiance. 2 pastas 2 drinks and some cheese was $100. Would have been fine paying that for quality food which this wasn't.

Variety was enormous (huge menu). Execution was pretty spot on. I made a comment at the table, "Eugenio certainly knows how to cook" as everything brought to the table was full of flavor, texture, plentiful and well seasoned, although the prosciutto and mushroom pizza was less than desirable. The pie had ham instead of prosciutto, and the overall pie, I would not order again. Much better pizza elsewhere (very, very nearby along Lake San Marcos). Service was good, but not without flaw.
