We had a great experience here! We were staying at the hotel and decided to order room service from Verise since we had been out all day. I got the fettucine and it was lovely. Flavorful, good portion, and tasted amazing. If we had been at the restaurant I definitely would have wanted to try a dessert. We came down another night around 8:30pm for the bar. It was beautiful! It's technically outdoors, but does have a roof directly over you. So you felt covered but still felt like you were outside, it was nice! Service at the bar was spectacular. There were a couple of other people around and he was doing a great job balancing everything. While our experience at Solea Hotel was very enjoyable (the room, the amenities, the front desk were all excellent), Verise, the only restaurant on campus was subpar. We had breakfast on two mornings. The first morning when we walked in, the hostess asked whether we had a reservation. We did not but the restaurant was 2/3 empty. We were told to wait 20-25 minutes. After about 10 minutes I came up to the hostess and said there were a lot of empty table. The hostess was annoyed and said they had reservations coming in. We were finally seated, and while we were there only two or three families came in - the place remained at least half or more empty. Many items in the buffet were gone and not replaced - the explanation was they were very busy around 7:30 a.m. (it was about 9:30 at this time). For the next morning we made a reservation. It was Monday morning and the place was mostly empty again. The server was not very helpful, and never came back after we asked for things like an extra spoon or an extra plate. Overall, the staff seemed highly displeased to work there and annoyed by customers. It is a shame because the hotel is great otherwise. It's too bad the restaurant has such a lovey setting because it's largely getting wasted. The remodel is just lovely. They also gutted the staff and hired people that seem less than thrilled to be there. As someone who's been coming here five plus years I'm disappointed. It's a little harsh, but true. If I didn't have the Bonvoy status at the Marriott to get free breakfast I'd skip it entirely to be perfectly honest. The menu isn't bad, just limited. I don't understand why they slashed the epic breakfast tacos from the menu or made the kid menu three items. The hotel is next to LEGOLAND you won't get away from families. What bugs us most is that Every. Single. Time. I've come in this stay the hostess acts like she's slammed and makes us stand there. No one else around. Then tells us to wait in the "lounge" while she finds table. I don't know what genius taught her to do that, but when you can see open tables in a relatively quiet restaurant it's very off putting. Maybe it's her, maybe it's managements dumb idea. I have some pics and a video so you can se for yourself. I decided to update this a bit to be fair.... Dinner is a whole other story. I think they put the A team on dinner. The Chicken Parm is delicious, just odd that it didn't come with any pasta or even a veggie. Still, Very good. The dinner service is definitely better than the breakfast service. Bread service is also unexpectedly delightful. The gnocchi is well prepared and tastes amazing. Again, just served by itself so maybe a broccolini or something would really be nice. Still can't up the stars because breakfast is that much of a bummer. A whole week of days for redemption and there were truly zero days that made me think I was unfair. This place is tucked away behind the flower fields in Carlsbad. Such a cute find! loved the decor, and indoor/outdoor seating. Our server was amazing. She ran through the menu as it was our first time there. We got the table side bread service and a few apps to share. Everything was delicious. Verise is one of our favorite local secret gems. Being Italian, it is rare for us to eat out Italian. However, we love Verise. It's a beautiful space with delicious food. Great ambiance - very inviting. We have celebrated quite a few special occasions here as well. The outdoor patio is beautiful and there is a garden area you can rent for parties or large groups. The service is always so wonderful. We always have the most kind servers and host staff. We have eaten everything from Brunch to dinner. You don't want to miss this spot. read more

I was so pleasantly surprised by this unassuming hotel restaurant. I had breakfast on the patio each morning of my stay, and it was one of the highlights of my trip. The staff members were the thing that put it over the top. They were so friendly and attentive. I appreciate that they recognized me and made an effort to make conversation. My coffee cup was always full, and my food came out quickly. I especially enjoyed the chai pudding. The strawberries were so fresh! read more

The bartender yelled at my kids over not having ice to give them, which was completely uncalled for and made for an uncomfortable dining experience. Let me start with the 2 stars goes to our server because she was just the messenger and a very sweet messenger at that (0 from the kitchen and maybe 1 * from the bar after the first lemon drop was sent back then redeemed), what came out of the kitchen had nothing to do with her. Our $68 "New York" was unlike any New York I've ever had elsewhere because there was now way it was a New York and they tried to pass it off as a New York and is a HARD NO! You decide for yourself...if you know what a New York should look and taste like. This was the greatest displeasure as we are just lovers of good food. The place was not busy at all for a Monday night, later in the evening, but still took almost 2 hours. When we arrived around 7:30 we immediately ordered a kids pizza for our granddaughter (we saw the wood fire pizza area and thought, WOW, should be an elevated experience) and it still didn't come out til almost 9pm and was nothing more than what looked and tasted like a heated frozen pizza. Our server took it off the bill because it was so delayed for our 3 year old girl. We ordered the chicken as well and it was delicious itself. Didn't really need the green paste on top but the chicken was juicy and spoke for itself. Would give this place another shot if in the area again but only after some major changes. read more

Had an amazing dinner experience, made amazing by the server Greg and the chef. We got the pasta wheel which was some of the best pasta I've ever had. Super full of flavor, I recommend getting some appetizers and sampling dishes. The chefs taste is highly recommended if you like getting a taste of a bit of everything. Very clean flavorful food! We had a really enjoyable breakfast at Verise The food was excellent, the restaurant has a great atmosphere, and everyone we encountered was friendly and welcoming. Our grandkids had a great time, especially when Ernest brought them little whipped cream cups. It was a nice extra touch that put big smiles on their faces. Wow! What a location, it's gorgeous! The decor is so tasteful with a touch of Tuscany! We began with a few starters which would pretty darn good. The meatballs were full of flavor, and the texture was perfect! The fried calamari was good, but the batter was a bit on the heavy side. I had the Gnocchetti Di Patate which was so light and fluffy, the sauce was elegante. My husband had the Tagliata Di Manzo, which he said was delicious and cooked perfectly. We gave this restaurant three separate chances during our stay, and unfortunately every experience was disappointing. The first time was at the bar, where service was incredibly slow. The second time we only stopped in for coffees, and even that took an unreasonable amount of time. We hoped the restaurant itself would be better, but it wasn't. Our server rarely came to our table, and we had to ask multiple staff members just to get basic service. We also waited a very long time for our food. To make matters worse, the portions were extremely small for the price. The food simply didn't justify the cost or the long wait. The biggest disappointment was the consistently poor service across three separate visits. It's clear this wasn't a one-off experience. What a bummer this place was over priced and bad. Was hoping for a good Italian place with cocktails close to home but nope this is just an over priced hotel restaurant and bar. Service was bad and slow and the food was bland. As a starter we ordered the parmigiana balsamico. This was literally just chunks of parmigiana drizzled with balsamic vinegar. No bread or anything else. This was also dropped off to us with no silverware. It took us about 5 min to flag someone down to get some. Our first drink finally came 10 min after our appetizer was dropped (~20 min after ordering) at this time I asked for the wine I ordered. They then brought a Chianti when I ordered a Pinot Grigio. Finally got the right wine maybe 30 min after ordering it. For the main course I ordered the spaghetti pomodoro with burrata. I could have made this at home much better. The sauce had no flavor and there was hardly any burrata. The pasta seemed store bought and was over cooked and barely warm. I had to ask for salt to even be able to eat it. My friend ordered the bucatini and it was so over cooked he wasn't even able to twirl it. The pasta just broke apart. His dish was also cold. I'm not sure if it's just a bunch of influencers reviewing this place or what but I absolutely can't recommend it. The service was non existent and the food wasn't well executed. It was also incredibly loud and hard to hear each other talk so I couldn't even enjoy the ambiance. 2 pastas 2 drinks and some cheese was $100. A beautiful new addition to Carlsbad I had the pleasure of dining at VERISE Italian restaurant yesterday at the Newley remodeled SOLEA Hotel and I had the most fantastic dinner ever we walked right in. It was Sunday evening seems like it was a slow day, which I loved because we almost had the entire property to ourselves no complaints here I love a private dining experience. Anyhow, we started off with an old-fashioned and an espresso martini, which were both done very well. Our appetizers consisted of a Crudo di Mare, the Burrata with beats and bread with prosciutto di Parma, which was out of this world and I'm talking about the prosciutto. The bread was good too. The crudo Di mare was pretty good but that prosciutto unreal. I also went for a limonchello spritz which was so refreshing and really paired well with my Meal for our main entrées, Of course we had to try a pasta because they make it fresh daily. I love a good gnocchi and that's really hard to find made out of potatoes, but they have executed it perfectly. That was very delicious. The Bronzino though was my favorite oh my goodness it came with these olives, capers, and cannellini beans. It was so delicious. I literally cannot wait to go back there again and let's not forget about the most top-tier service that we received from Annie you guys. She was just so amazing. I mean, she smiled. She was happy. Outstanding service from our server, Gregory. There was a slight delay on the initial cocktail, but other than that, it was great. The food was very good. The calamari was definitely the best I've had in a long time, with delicious peppers and fried basil. The Bucatina Amatriciana was very good, but I was hoping for more chunks of guanciale. The bolognese was decent but lacked flavor and could use a little more salt. My bff and I decided to have lunch after visiting the Carlsbad Flower Fields. Verise is located inside the gorgeous Hotel Solea Hotel. The service was great, ambiance A+, drinks and food were delicious. We had the SPAGHETTI AL POMODORO and BURRATA CON BIETOLE (beet salad) with a spicy margarita. Highly recommend! Unfortunately, as much as it hurts to write this review the establishment needs to know what patrons are experiencing while dining in. You would think they would serve quality foods but can't get a simple margarita pizza right?!!? I can't imagine what else is going wrong. The pizza was terrible extremely salty and the "cheese"crumpled as if were small curds of cottage cheese. I'm not sure why they would add a beautiful oven for them to not perfect something so simple... I have no idea what they used for cheese but it certainly wasn't good and certainly wasn't cheesy.... Lots of reviewers rave about the food at Verise. I don't know. Couldn't get served. I stepped into Verise from the Hotel Solea lobby, the usual route for hotel guests eating at a hotel restaurant. Waited several minutes before a server acknowledged me and directed me to the hostess station, which was not within sight of the door. Waited several minutes more for a hostess to seat me at one of the empty tables visible from the hostess station. Waited more than several minutes for a server to bring a menu. Waited longer still for a server to return to take my order. I'll never know how long it took her to return. Total elapsed time 30 min and no drink or food order on a Saturday evening when the dining room was not super busy. read more

We had such a wonderful experience at Verise at Hotel Soléa and will absolutely be back. From the moment we arrived, the setting set the tone for a great night. The ambiance is beautiful, with perfect lighting and music at just the right level to enjoy conversation without feeling rushed or overwhelmed. We started with cocktails, and both were fantastic. The Hugo Spritz was light and refreshing, and the Old Fashioned was perfectly balanced. We opted for the tasting menu and added a few additional items, which gave us a great opportunity to experience a variety of dishes. The standout for us was the Verise Bruschetta--easily a 10/10. It had the perfect balance of creamy, savory, and slightly sweet flavors. Absolutely delicious. The Gnocchetti di Patate was another highlight, with rich flavors and a satisfying combination of sausage and sauce. The Polletto al Mattone was also excellent--juicy, flavorful, and paired beautifully with the potatoes and sauce. Service truly elevated the experience. Our server was attentive, knowledgeable, and genuinely friendly, walking us through the menu and checking in throughout the evening. The support team was equally warm and welcoming, making us feel well taken care of from start to finish. We also appreciated the overall value. We left feeling like we had enjoyed a full, thoughtfully curated dining experience, with plenty of food and great quality for the price. The atmosphere is a bit off -- no music, and the outdoor seating faces the pool, so you've got kids and guests walking up to the bar in bikinis. It doesn't quite feel like a proper dining experience when you're facing a pool.. There's also a concession stand inside the restaurant next to the bar that adds to the casual, disjointed feel.
