It was definitely worth the approximately 30-minute drive a some traffic. They call it True Lav My palette's favorite flavor is their honey lavender. While I got a medium size with three scoops, the distinguishable flavors make you truly appreciate artisanal creativity. Inside you'll feel a comfy vibe with a few tables for coziness, including a table for babies only - too cute. The piano displayed adds to the traditional feel of an old town in Italy. We received excellent warm service. You can tell the pride taken in their organic ingredients. There was a lesson or two as well when we discussed the contents. Great gelati! We felt so lucky to have been patrons of this sweet gelato shop. Organic, homemade and deliciously fresh gelato served up quickly by the sweetest people. They gladly offered us samples and included a free tiny cup serving for our toddler. The stracciatella was our favorite, it's like vanilla with pieces of chocolate that she says is stretched so it's very thin and not overwhelming. I combined the peach cheesecake gelato with the pineapple mint sorbet (I'm a heretic, I know). They were both fantastic, in different ways. If you are driving by Salado on I-35, this is the perfect easy stop for gelato / sorbet. What a great local business, with homemade, organic, and natural ingredients (no artificial food dyes, so finally safe ice cream for my nephew!) The interior of the store and the owner are so charming - you step inside and it's like you're transported to someone's quaint home in the Italian countryside. An upright piano in the corner, vintage high chair, so precious. The owner took the time to explain the ingredients he uses, offered us samples, and explained that they try to function without waste in the ingredients as well - using the rinds of the fruits in the flavors for zesting, etc. The gelato was great and very affordable. A ton of different flavor options - one thing I would like to see added would be short descriptions next to the flavors. I wanted to try everything but didn't want to ask what every single different flavor might contain. Also - the outdoor seating is AWESOME for people watching and enjoying in the fresh air, but the owner would do well to add a nice trellis with vines and such on the patio edge to block the view of the business right next door - several "buy CBD here" tacky signs that sort of ruin the feel of the Italian village you stepped into in the shop.
