OPEN BAR -- CHERRY BOMB LATTE: -- has a cherry chocolate mocha quality to it -- not as creamy as a normal latte but it makes sense with chocolate dominating cream -- darker color than your average latte -- definitely more mocha type taste -- I have not been a mocha fan since the university years so this is not really my thing, but it is pleasant enough RATING = A- SHIRLEY COLA SPRITZ: -- raspberry co-fermented cold brew -- cherry, sparkling water -- taste reminds me of a dark chocolate covered dried raspberry (I think due to the fermentation) -- very aromatic once stirred -- you can sniff the fermentation factor RATING = A+ BANANA MOCHA: -- espresso, banana, choc syrup, milk -- color lighter than "cherry bomb latte" -- close to a latte color -- banana is clear when you roll it around in your mouth and over your tongue but subtle is probably a good thing -- pretty bold java RATING = A OMAKASE tasting -- Aaron was our host with a female associate. COURSE 1: APERTIF -- vanilla, pandon, clear vanilla taste, light sparkling factor, not sweet, not very crisp, light nose and taste COURSE 2: -- pink bourbon coffee -- light towards medium roast -- earthy, not sour or barely, not bitter or lightly so -- color is lighter towards medium -- lightly sour --nice sipper -- good black COURSE 3: "BOTANICAL MORNING CLOUD" -- cucumber, fresh basil, cordial, Belvoir? -- vanilla, collins syrup, dash of white peach syrup -- "flash brew" (Japanese style) -- light and smooth -- very aromatic of peach and basil -- creamy, peachy taste, lychee -- great throughout nose and palate RATING = A+ COURSE 4: -- espresso (Brazil/Ethiopia) -- blueberry, strawberry jam, cocoa (tasting notes) -- Korean style strawberry Jello type taste -- coconut water -- refreshing -- oat milk (non-fridge shelf healthier brand sold at Sprout's) -- brown butter wash by Pie Brothers -- mansi syrup -- has coffee w/fruit notes but coffee wins -- light sweetness -- barely sour, lightly bitter -- smooth and wonderful -- a very hint of white wine type sniff on the nose? fermented? Unison coffee tasting experience was educational, tasty, leaves you wanting to explore more about the coffee roasting and curating world. It serves 4 very different drinks that take you on a journey. Start with approachable, enjoy an espresso that kicks you off for the mixed drink with delicious cereal foam, and classic mixed with fun flavors to end the show. Service was attentive. Staff broke down each aspect of each beverage explaining origins, roasting method, and how to curate to bring you the final product. Unison is found inside a pizza shop situated in a mixed living/retail building. Plentiful parking along retail perimeter and some in the parking garage. What an experience! Thank you Unison Coffee team for sharing this with us! I didnt know what to expect but I was blown away! We are typically always on the go when we get our coffee, this is a way for us to pause and actually enjoy coffee and conversation! There are four courses: and aperitif, filter coffee, slow brew and infusions, and digestif. We started off with a light and bubbly tea infused drink, it was light and airy, a perfect way to start the experience. Next came the filter coffee, this was a fermented coffee bean drink served iced, a bold flavored drink for sure! The slow brew and infusions was my favorite, servesd to resemble an old fashion( also on of my favorites) this was my favorite of the four. It was balanced perfectly, not too sweet and just the right amount of coffee flavor! We ended the experience with a digestif, a coffee drink with milk and hints of raspberries! Finally had a chance to experience coffee omakase and it was so worth the wait! We were greeted by the friendly co-founders who were very welcoming, warm, and attentive to each of us which made it an intimate experience. Fun coffee omakase experience! Made reservations about a month ahead of time. The whole experience takes about an hr and is done in small groups of 4. The omakase is led by JB and Aaron who you can tell are very passionate about coffee and know their craft. It was a little over $50 for two people which was a little high imo but I don't regret it since I was a fun experience and the coffee was really unique. It starts with a palate cleanser and small sweet pastry bite. Then moves to two drinks then a small savory bite. It ends with a sweet coffee drink. My partner was able to get his whole experience decaf which was really appreciated and also a completely different flavor profile which was fun to compare. They told us at the end that all the drinks together was about 4-5 espresso shots! Note: the entrance is from the parking lot behind the church and in the corner of all the shops. It was a bit confusing for us to find so plan ahead of time to give yourself some wiggle room. read more

Omakase experience 5/5! We had a tea to start for course 1, then 3 courses of coffee. Great conversation with Aaron from beginning to end. He told us the description and origins of each drink. It was so neat to learn the inspirations of the drinks and about the different sources of local tea/coffee they get from around San Diego. You can definitely feel the passion and love for coffee through the interaction and drinks. Definitely recommend and will try again another month when the drinks rotate :)! read more

I went to Unison excited to try the coffee they showcased on Instagram, but the experience fell short right away. [[HIGHLIGHT]]When we walked in, the tables and floors were dirty.[[ENDHIGHLIGHT]] Ordering was easy with plenty of staff around and no other customers, yet our drinks took longer than expected. One drink sat waiting while the barista stopped to chat before finishing the second, which felt unprofessional. The coffee was not good at all. Overall, the visit didn't meet expectations--especially after driving 45 minutes with high hopes. The whole experience felt underwhelming and not worth the trip. Today (5/17/25), was my second experience with Unison Coffee, and nothing failed to amaze me this time around either (-: The duo that runs this is JB and Aaron, and today they had a collaborative tasting menu with Merlin. [[HIGHLIGHT]]The physical layout is intimate, a dark room lit up with diffused lights that radiate around the tables you will sit at.[[ENDHIGHLIGHT]] [[HIGHLIGHT]]The coffee experiences are a group setting, whereas with this collab event it was a two seated experience (I went with my partner).[[ENDHIGHLIGHT]] [[HIGHLIGHT]]Throughout the brews and bites you are kept engaged with drink lore and questions that guide you to get to know all those in the shared space - love LOVE this as I do find enjoyment in social and community spaces.[[ENDHIGHLIGHT]] The drinks use tea and/or coffee with mixologist applications. Exclusive Unison experiences have small bites to pair with a couple drinks. The Merlin collab included well thought out and executed, fine dining plates. I really enjoy that they get science-y and fun with the drinks. I also hope to attend more collab-esque events as food and drink pairing - intertwining the filipino culture through the food and even some of the drinks gave such nostalgia factor. And being able to have Filipino cuisine shown in a different light was delightful! If you're looking for a curated experience, I highly recommend. Great place to expand your palette. If you're used to large sweetened lattes, this may be a complete 360 from what you are used to if you attend the coffee omakase. But if you come with an open mind, and mouth; look no further! I've visited Unison Coffee on their regular Saturday Pop-ups and recently their coffee experience. JB and Aaron are just incredibly kind and genuine people- their hospitality is reflective in their coffee drinks. I love that they highlight other local businesses like Cozy Corner Waffles and Banana Bread by Marcus Patterson. I recommend their Pandan Latte-- not overly sweet, balanced, refreshing in this warm summer; I enjoy it with oat milk and iced.
