Our experience at Meat & Cheese in Aspen was disappointing from beginning to end…read more To start with, the food was mediocre in every sense. The quality did not justify the prices, the flavors were forgettable, and nothing we ordered stood out. Unfortunately, what happened afterward was far worse. My wife accidentally left behind a shopping bag containing a brand new pair of sunglasses she had purchased earlier that day. When she returned to retrieve them, our interaction with a server named Carson was deeply disappointing. Instead of simply confirming ownership in a courteous and professional manner, Carson repeatedly questioned whether the sunglasses were actually hers. He kept emphasizing that they were brand new and worth around $600, making it clear that he found it difficult to believe they belonged to her. It was impossible not to feel that she was being judged based solely on her appearance. There is absolutely nothing wrong with verifying ownership of a valuable item. In fact, we appreciate businesses that take lost property seriously. What is unacceptable is allowing assumptions and stereotypes to influence how customers are treated. One lesson worth remembering is that genuine elegance and long established wealth rarely need to announce themselves. Those who have had the privilege of success across generations often feel no need to advertise it with designer logos or outward displays. True class is reflected in education, humility, confidence, and, above all, in the way people treat others. Ironically, Carson's assumptions said far more about his own judgment than they did about my wife. No customer should ever be made to feel that they need to "look wealthy" in order to be treated with respect. We hope management addresses this issue seriously. The mediocre food was forgettable. Being judged and treated with prejudice is not. Every guest deserves to be treated with courtesy, professionalism, and dignity, regardless of how they are dressed or what assumptions someone chooses to make about them.

A friend recommended Briar Rose, and was she spot on. We could not have been more pleased with the food or the great service. It's a neat place, both clean and comfortable. We started with three perfectly seared bacon-wrapped scallops. They were so buttery with a great light sauce. I nearly ordered more as they would make a great entree. I've had some great scallops, but I promise I've never had better. My wife and I were looking for smaller steaks as we've seemingly stayed full from our previous meals. My wife ordered the sirloin, and I went with the Australian Kobe-style Waygu steak. My son got the lamb chops. For sides, we chose Brussels sprouts, green chile creamed corn, and mac and cheese. You already know my Waygu inspired me to have a religious experience. I'm not kidding. I've had both Japanese A5 and Kobe Waygu, and this was better. I got it with a wonderful chimichurri, but this needed no accompaniment. The sides were all great. I don't like Brussels Sprouts, but I always get them because my wife loves them. These were well above average. The mac and cheese was super creamy. Our favorite was the green chile creamed corn. My wife thought the sirloin was very good, and was amazed at its thickness. My son devoured the lamb chops. It's a favorite dish, and he said this was by far the best lamb chops he's had since our 2014 trip to Aruba. It wasn't an inexpensive meal, but considering all we got, the quality and the great service, it was worth every penny. This is going to be one of those meals we remember and talk about for years to come.
