So we took a drive to the road that takes you to the Chinle Hospital. Just as you turn at the light, just to your right is a small food truck like place where the Burrito Lady has her business. We walk up to the trailer, looked at the menu that sits right next to where you order. I saw the Roasted Mutton Sandwich, so we both ordered it. She asked us if we wanted it on a tortilla and fry bread, so we both said fry bread, and ordered our drink as well. The Roasted Mutton Sandwich is comes folded like a taco on Indian fry bread, stuffed with the Roasted Mutton, long slices of green chili, green onion, and tomato. What made this sandwich taste so good is the flavor of the Roasted Mutton, and of course the Indian fry bread. For those of you that have never had Mutton, you have to understand that it is fully cooked, and is an acquired taste. I first had Mutton in Tuba City at their daily swap meet at noon. It was grilled and was filled with similar like this one in Chinle. The way they cook it makes it real tasty. This is my story on my special lunch in Chinle. I went up to the window and placed my order. They hand you a buzzer to let you know when your order is ready. You can sit in your car until your food is done or they also have a table and chair set up for you to sit at if you'd like. I never wait more than 5-10 minutes for my food to be done and service is always very friendly. The tacos are absolutely amazing in flavor & very authentic street style. The horchata was sweet and refreshing as well. Ive now had the Birria and Carne Asada tacos and have zero complaints about both! Don't miss out on this small town treasure!!

Found this fantastic food truck just below the Navajo dam on the San Juan River in a sleepy little town in far north west New Mexico. We had been out fly fishing the San Juan River for a long day. We unload at the fly shop and we are starved. One of the guides tells us about the pulled pork BBQ sandwich from this little food truck. Our interest is enhanced. We go in to settle up our bill with the fly shop, and he recommend this food truck! Thank you sir! Pulled pork sandwich is what to try here!
