    We took an overnight trip from FTW to stay at the Interstate Inn and dine here at Chef Pyle's new…read morerestaurant. The restaurant is lovely as you can see from my pics. We were seated at one the booths for two along the wall overlooking the open kitchen. I intended to order a Manhattan but upon discovering they're pouring Gallo vermouth decided on a Maker's Old Fashioned which was nicely done. Anne went with a glass of an Italian Pinot Grigio. I ordered that as well with my entree. We started with the shrimp ceviche. This is a unique rendering of the dish and quite enjoyable. The portion, however, was surprisingly and remarkably small for $17 even by upscale FTW/Dallas restaurant comparisons. The Caesar salad presentation here is so creative. See my pic. The dressed whole Romaine leaves are arranged in a toasted Parmesan cylinder which you crush up, slicing the leaves yourself to mix. The dressing is excellent. Again the portion is small, especially to share. But the price point is reasonable at just $10. We both opted for the grilled quail. This was the star of the show. The quail were nicely seasoned and perfectly grilled. The mound of crisp, fresh Arugula sang with the most perfect Arugula enhancing vinaigrette we have ever tasted. The poached pear, compressed beets, and seasoned walnuts all complimented so perfectly these grilled birds. So good. If we were locals this would become a regular destination for.
