The dough needs to rise and shaped then chilled, overnight is best, then they need to be boiled with some baking soda, or other food grade alkali, to produce a Maillard reaction in the crust. All this takes time and money. To be fair, the staff is friendly, the store is clean and they do have good chicken salad and bagels are generally fresh. No overnighters that I am aware of.
