This was the first gin I genuinely enjoyed drinking straight, and even more so when mixed into cocktails. What immediately captured my attention, and imagination, is their Barrel-Aged Gin. Not just taking a page from whiskey-making but taking care to honor the traditional process, this is what happens when you take the classic No. 9 and age it for two years in new American white oak barrels. For example, my husband and I ended up muddling raspberries and pineapple in gum syrup to make the flavored ones because we couldn't find the flavored ones. We can't wait to try more Waterloo, Treaty Oak and Liber & Co. products after this!
