Jerky dip was delicious. It was very easily spreadable and a little sweet. Wagyu Tallow was in the end of the fridge aisle. I will have to test this out when I smoke some brisket or something. Wallace is a rare combination of the highest quality product, convenience and affordability. Their website is simple to navigate and order from, while the monthly pick up as quick and easy as it gets, you're in and out in 30 seconds. The products, well I don't know where to begin. Everything I have purchased from them has been excellent (and there has been a lot). I have purged my kitchen of any grocery store bought meat and have switched solely to Wallace. Their meat comes vacuum sealed and frozen, which has resulted in my freezer being stocked to the brim with grassfed, organic and ethically raised meat. I challenge you to find a better steak in the city at any price, let alone the prices they charge. For a similar cut at these price points, you're probably looking at a styrofoam tray with a gray piece of meat on it from your local supermarket.
