Service was quick, very friendly, and knowledgeable. Wood fired grill right in the middle of restaurant, vintage wood refrigerator, butcher block counters and tables all screamed that this restaurant has a soul and character. Breakfast was so good went back same night for dinner.  This was the best steak in years and the only cut available at that time.  The side of tallow fried onion chips and mushrooms were again the best preparation of fried onion I've ever had.  House sauce was great. I have not experienced dinner yet as we live about thirty miles from Helena. The Union serves local Montana raised meat and produce. The lunch menu changes regularly - depending on the season. The interior is comfortable and has maintained much of the historical architecture. Had the Trinity with dirty rice and a side of mac n'cheese. The trinity consisted of sausage, pulled pork and burnt ends. Very, very dry. Not sure what the mac was but it was okay and the dirty rice was not only dirty but a dry clump of rice. Left with my stomach crying "WHY?" later on. Fortunately no accidents if you know what I mean. The 6 oz fillet seemed more like 4 and was ok - the baked potato noticeably smaller than most but loaded at least. The restaurant scene is Helena is pitiful, to be honest. Billings is the place in Montana to be for restaurants. Maybe Bozeman or Missoula but unfortunately, the capital is lacking. The martinis were decent but not as good as the windmill in billings.
