My kind of place. A small, independently owned and run food place that specializes in something good and does it even better. Tina's is a pie kitchen, making "just" pies and quite a variety of them. Baked come in large pans and are full of filling, surrounded by perfect thin, flaky pie dough. Availability of fruit pies depends either on what is seasonally fresh or what she has put up in season for later use when it's off-season. But there are no fillers like dull fruit purees or concentrates and no "natural flavors" to try to create a taste of what the fruit is supposed to be like. These pies taste fresh and real because... well, because that's what they are. The daily menu indicates which ones you can consider, just a few being apple, peach, cherry, blackberry, etc etc etc and then there are numerous cream pies which I didn't try because they simply looked too good, and finally more traditional types from the region like buttermilk, pumpkin, sweet potato, pecan and variations here and there with chocolate. I did try some fried versions, smaller and deep fried, peach plus an egg, sausage, cheese breakfast pie. These filled the gap for a moment, but just. But to fully appreciate Tina's talent you really have to buy a whole pie and that's all there is to it. Stopping here is an absolute must if you drive by and the sign on her trailer says open, which according to her is about 80 hours a week. The very high level of craft she puts into her pies puts to shame the proliferation of crappy baked deserts in grocery stores, made by huge bakery conglomerates without one bit of individual thought given to the product beyond lowering production costs. Tina clearly demonstrates her diligence in providing these so many hours of the week, which almost requires you, in fact makes it a duty to stop by and enjoy this level of excellence, as it's so rarely found anywhere today.
