This is one of the best food trucks ever. Service is quick & they're so sweet. And one thing that really catches my eye on a food truck..THE CLEANLINESS! You can tell they take care of their truck & keep it up. I went for the crawfish roll and mac n cheese. OMG that roll was absolutely delish! Perfect seasoning on the crawfish. Not just a bunch of salt or horrid batter. The roll had the perfect buttery toasting to it. The veggies on the roll were nice & fresh. Not all soggy. The fries were good too. The mac n cheese lawd have mercy! Such creamy hooey gooey cheesey goodness. I've never understood how people ate mac n cheese as it's own meal but with Ghost Kitchen's I could. It shares the parking area with another business, so parking space is limited. I parked and walked up to the window. The menu is a little confusing but it's basically the photos posted on the outside of the food truck. I decided to order a torta and a gordita, both with fajita meat. I also ordered an horchata to wash it down with. The torta and gordita were both delicious. The meat was tender and flavorfull and blended well with the lettuce and tomato inside of it. The sauce gave it a creamy, savory, comforting taste to add depth to the bun on the torta and the corn shell of the gordita. The cheese was just the right amount, complimenting the meat but not overwhelming it. The lettuce and tomato kept everything tasting fresh. Last but not least, what is Mexican food without salsa. The red and green were both on point! While I'm not a big sweet drink person, the horchata was very good. This was a solid meal from a local food truck and did not disappoint. The parking is very limited but you can call ahead and order. It's located off of a busy road and traffic is a bit annoying around there but other than that, the service is excellent. The food truck operator is very nice and the food was worth the rain I stood in to order the food. There's not much to say about the ambiance, since it's a food truck in a very small lot on a loud road. I'll return to order the pambazos and sopes next. I'll also try the mango or piña agua fresca next time. If you are in the area, stop by and try this authentic Veracruz, Mexican cuisine!
