Timber is hands down my favorite restaurant in Johnson City right now for fancy dinners! It's a tapas-style spot, so make sure to go with people who love to share--it's the best way to experience their amazing food. I went with my girlfriends from medical school, and we ordered about 10 dishes to share. Every single one was so well-curated and absolutely delicious. The variety of cuisines in one meal is such a unique and impressive experience. What's even better is their rotating menu that changes with the seasons, which means there's always something new to try. I'm already planning to go back every couple of months to see what's next. Timber is totally worth the money, and I can't recommend it enough!

We had some appetizers and drinks! We enjoyed every bite

Food was great and drinks too. Would recommend to share some plates so you can try most of their menu

This place is very good but you really have to be adventurous in trying new things. Unique mix of tastes in flavors in a variety of different formats. We went as a group of 6 or 7 of us and ordered 1 of almost everything on the menu kind of ale carte. All of it was great even things I wouldn't normally want to eat like corn for example.Wine list was pretty decent as well. Reason for my four is when looking at what I would order as a meal on my own, I'd really struggle. Not your common menu items. Nonetheless, I'd recommend this place for a nice affordable fine dining experience.

FRIED GREEN TOMATOES with whipped goat cheese, honey, thyme

Timber! is a good restaurant, with interesting (good) flavors, good service and a relaxing ambiance. The food and drink options are unique and creative, and the menu is diverse. They offer small plates (appetizers), medium plates (shareable/tapas) and large plates (entrees). Their presentation for all plates is really good. We ordered a couple of specialty cocktails to start, and they were good. We ordered a couple of small plates to share. The fried green tomatoes were really good, especially with the combination of honey and goat cheese (9/10). The corn ribs were also really good. The Cajun dry rub and cumin crema were a nice flavor profile, but I think I liked even better rubbing it in the honey and goat cheese from the green tomatoes plate. Overall, I rate the corn ribs an 8/10. We followed that with a couple of medium plates to share. The lamb meatballs were good, but we would probably try something different next time (7/10). The 4-pepper fried quail was very tasty - really liked the flavor. The only negative I can say is that the fried batter was a little thick. I'd rate the quail an 8/10. For desert, we tried the rotating local ice cream, which as strawberry. It was really good (9/10) Overall, we enjoyed our meal and our experience. We will visit again in the future.

Plum gazpacho. I love all gazpacho-but This one was definitely on the short list of best gazpacho!

Jonah was an excellent server, had great suggestions. We had plum gazpacho (excellent!!) split a burger (again-excellent smash burger). Had pH14 drink, very good suggestion from Jonah. Tuesday night visit, we got in right when it opened at 5pm. By the time we left, it was packed-for good reason. We will definitely be back.

Delicious food. Server was nice and walked us through the menu. Parties of 7 or more are required to be on one check and a 20% large party service fee is added to the final bill. They have small, medium, and large plates. Environment was rustic casual.

Mushroom Tartine

After tonight's trip to Timber! This place is on top of my list. I love that the menu changes weekly or monthly, yet not entirely so you can have something you enjoyed previously. The bartender is awesome, very skilled at what he does! So many great drinks and the food was delicious. Highly recommend the fried green tomatoes, buffalo cauliflower, & mushroom tartine. Everything was great so you can't go wrong! Our server Malachi was so personable and went above and beyond to provide us with great service. The atmosphere is always such a vibe, check them out!

Food was good but portions were small and although delicious, was overpriced on my humble opinion

Excellent food with unique and eclectic options. Great for a glass of wine and sharing tapas with friends or a nice date night.

My view of this place is more of a 3 and 1/2 star review. I haven't been to a speakeasy in a while…read moreand I've never been to one with my wife. This place was close to where we were having dinner at so we walked over to the place. Just walk in to the building and someone will greet you and they'll take you behind the bookshelf where you can't seat yourself. We took some of the low seats. Nothing wrong with that we were greeted with water so we had to decide what we wanted to drink. Highly recommend that you use your phone since the menus are QR code. Prices were pretty fair for the speakeasy. Restrooms were absolutely clean. A few things I noticed that kind of dropped a few Stars was that the Speakeasy was absolutely cold!It had to be about 60° inside. It took a long time for us to be served. Lastly, I noticed some of the staff drinking behind the bar. People here are absolutely friendly , you got all walks of life here and everyone here is having a great time. The staff are dressed for the occasion and it does feel intimate being inside this speakeasy. Overall, I wouldn't mind coming back here again. After leaving, you leave through the back door. I do believe that the prices were a bit High compared to other visits of speakeasies I've been to but that's more so on Tennessee's part for the way they Factor checks.

Naturally I bought a ticket weeks in advance and got out my "Janet" costume. Rocky Horror is my not so secret secret love and I've been to dozens and dozens of performances throughout the southeast and in the UK. A girlfriend joined me and we met up at Capone's. The bar itself was really beautiful. A wall of booths lined the left and the substantial bar was parallel. The bouncers checked us in online and we got our wristbands with no issue. Drinks were up first and as I had a 30 minute drive back to Kingsport, I limited myself to one, but it was really good! Top shelf gin and soda with extra lime (to cover up the gin flavor - haha!) We moved beyond the bar into the second lower level space which was a mini/performance venue. The kind I frequented in high school and college (before kids, really...) and we staked out a place at the front so we could see the whole thing. Partially because I freaking love Rocky Horror and partially because my girlfriend is super petite and wouldn't be able to see over anyone's head if we didn't. I was delighted that there was an opening band. Having no idea what to expect I thought it was a bonus. However the bigger surprise was that the opening band was part of the Rocky cast! It ended up being a fantastic musical rendering of the movie and musicals I have seen before, complete with costumes and a word for word script recitation along with all musical numbers. We were blown away. I wish I could have gone back again for a chill evening at the bar, but I give it my full approval. The drinks were good, the aesthetic is really sumptuous and pretty, the restrooms were clean and the show was super fun!!! I'll make it back next time I'm in Kingsport or JC.

We've ordered room service and I've also eaten at the bar. The bar has Great ambience with a fireplace and very nice architectural features. It also has tables where you can sit and eat. As for the food, the breakfast is good , for dinner, the Pork chop is phenomenal, the airline chicken is very, very good, but the deconstructed Wellington was disappointing. Burger is pretty good too. Friendly and helpful staff. I love this hotel.

While this is in the hotel, I feel like this is a local bar or at least that's how the bartenders treat it. If you're a hotel guest you're ignored and get less service. Yet you get to watch the locals get preferred service. I sat and watched an older female guest go behind the bar, one bartender follow a Middle Aged man out of the bar and when they came back together about 15 mins later, she only talked to him and the other gentleman he was there with not making drinks for anyone but the 2 of them. I saw the bartender who took my order stop making my drink to take care of people she knew. I've had that same bartender when I stayed her before and she was unpleasant last time too, so she must night like out of towners. I wasn't overly hungry so just ordered the fried green tomatoes. They were tasty but very dry. I told her I didn't want remoulade, so got ranch instead, for an additional dollar even though I didn't get the remoulade (and I actually didn't even like their ranch). I may eat in the restaurant again if I stay at the hotel in the future. However I'll look to see who the bartenders are and if it's either of these 2 ladies, I'll probably save money and not give them my business.
