Hit after hit with this menu. This is the a very culinarily creative menu, especially for the area, and it paid off. This restaurant is like a mix of appalachia, middle eastern cuisine, and european techniques. The corn dogs were good, but not the table's favorite. Everyone raved the fresh ricotta with the roasted currants and pine nuts on fresh bread. The mushroom terrine was my mom's favorite dish of the night. The beef keema curry was delicious and a perfectly hearty winter meal. I loved the lamb hand pie, and the puff pastry was perfect and the filling had lovely warm spices. The beef tartare was different from what you may expect, but it was really good when you had a bite of everything, especially the sourdough chips. The ambiance could be best described as a hipster hunting lounge. It felt clean, the chairs were comfortable. Our server was really sweet and she was very knowledgeable about the menu. It's a tapas-style spot, so make sure to go with people who love to share--it's the best way to experience their amazing food. I went with my girlfriends from medical school, and we ordered about 10 dishes to share. Every single one was so well-curated and absolutely delicious. The variety of cuisines in one meal is such a unique and impressive experience. Timber! is a good restaurant, with interesting (good) flavors, good service and a relaxing ambiance. The food and drink options are unique and creative, and the menu is diverse. They offer small plates (appetizers), medium plates (shareable/tapas) and large plates (entrees). Their presentation for all plates is really good. We ordered a couple of specialty cocktails to start, and they were good. We ordered a couple of small plates to share. The fried green tomatoes were really good, especially with the combination of honey and goat cheese (9/10). The corn ribs were also really good. The Cajun dry rub and cumin crema were a nice flavor profile, but I think I liked even better rubbing it in the honey and goat cheese from the green tomatoes plate. Overall, I rate the corn ribs an 8/10. We followed that with a couple of medium plates to share. The lamb meatballs were good, but we would probably try something different next time (7/10). The 4-pepper fried quail was very tasty - really liked the flavor. The only negative I can say is that the fried batter was a little thick. I'd rate the quail an 8/10. For desert, we tried the rotating local ice cream, which as strawberry. It was really good (9/10) Overall, we enjoyed our meal and our experience. We will visit again in the future. read more

Out of this world good food! We sat at the bar, which we loved. The bartender, Brandon, was fun and helpful and you can see that he just loves his job. Such a fun experience. We ordered the trout dip, the pig tails (MUST TRY), the kale salad which is also stellar and the popcorn chicken which was equally as yummy. We can't wait to visit this city again so we can eat here. Timber has always been one of my favorite JC stops. The atmosphere is incredible (both inside and out). I always get the brussel sprouts here - you won't regret it they are incredible. I enjoyed the drinks made by a skilled mixologist who also knew the menu very well and made awesome suggestions based on my preferences. I had crispy rice salad that had lots of crunch from the fresh herbs and vegetables, beef tartare and crispy trout skins. The chef is certainly not afraid of using spices and unique ingredients. The hand pie was Ruben and was tender and delicious. The watermelon salad was magnificent. Chicken was good and texture and flavor was great but the other things were so good, they made it seem basic. The ambiance was inviting and approachable. Not overly formal for sure. Impromptu trip to Johnson City and decided to try this place without a reservation. Inside was full so we sat on an outdoor patio, the weather was great so no big deal. Our waiter was terrific, Malachai. Ordered the beef tartare with potato chips, the smoked trout dip with saltines, and the mushroom toast. 1. Beef tartare was terrific. Nice pops of acidity throughout. Tiny tiny tiny chips (made from fingerlings?). 2. Smoked group dip was divine, my favorite dish did the night. The saltines are deep fried, I believe (delicious). 3. My husband hates mushrooms but was willing to try the mushroom tartans bc it looked so good. Wonderfully fresh mushrooms on great sourdough and covered with cheese. Overall, everything was great. I will start by saying the service was amazing. We were greeted and seated promptly, and our food came out with such speed! Our server was very kind and accommodating. We went to timber because we heard so many people rave on the food, however, this was the biggest let down. My husband and I ordered three medium plates and one large plate. The portions were decent, but the flavors and preparation were incredibly underwhelming. The citrus endive salad was refreshing, but there wasn't much to it other than some leaves and grapefruit on top of a goat cheese "vinaigrette" that was the consistency of pudding. Definitely not worth the price tag. The hot chicken was heavily breaded and every price I had was very rubbery. It seems as thought only dark meat from a chicken thigh was used. It also lacked a creamy sauce for pairing. Along the same lines, the curry potatoes were heavily breaded and fried. I search for a true potato wedge and there was only one in the whole dish - the rest was just bits of fried breading. There was minimal crab chunks to be seen and the entire dish was covered in gravy. The corn appeared to have come from a can and the jalapeños were not fresh. The entire dish was heavy and reminiscent of a KFC bowl. The Lastly, the lettuce wraps were our favorite in terms of flavor, but the crispy beef was far too tough and the dish itself was skimping on portion size. read more

I live about halfway between Johnson City and Asheville and this just became one of my top two favorite restaurants in either city (the other is Jettie Rae's in Asheville). My partner and I arrived without a reservation around 7pm, found street parking right out front, and got seats at the bar within a few minutes. Brandon (?), the bartender, was wonderful, as was the hostess. He was so personable and kind and even shared his recipes with me for coffee-infused campari and rosemary simple syrup. For drinks, we ordered the cafe negroni, black negroni, and their take on a manhattan. All the cocktails were wonderfully balanced and not too sweet, which I find is rare (for my tastes). For food, we got the carrot soup, beef tartare, fried cauliflower with tahini sauce, homemade ricotta, spiced fried chicken, and beef curry with paratha. For dessert, their signature smoked vanilla ice cream. And a bit of Sfumato as a digestif. Everything was excellent! Such complex and balanced and wonderfully paired flavors. Our favorites were the carrot soup, beef tartare, spiced chicken and ice cream. I lived in NYC for about 5 years and still go back a lot and my bar for great food is high but this chef would give any great New York restaurant a run for its money. I highly recommend it and, even though it's an hour drive for us, we're already excited to go back. Go, you won't regret it. read more

Was down in Johnson City for a short fishing trip and found this way cool little restaurant not far from the ETSU campus. What a gem. The place was inviting n low-key with excellent food and beverages. We couldn't decide where to start but since we were trout fishing figured smoked trout spread was perfect. And was it ever. Then pork bites w jalapeño and that was a meal! It was actually a compromise when I saw the neighboring diner having the brussels sprouts and lamb meatballs. They were enough to feed me twice so maybe try them next. She said they were delicious. Really glad that we stumbled upon this laid back cafe great service from start to finish. Absolutely will not accommodate large parties, even if you are okay with sitting separately. Weird! Instead, they suggested a table outside in 82 degree heat. Then stated that they could seat the reservation inside for 5 and add one more chair to the table making it 6. However, other 4 would have to sit outside despite the fact that other tables were available inside. Very strange experience, but essentially resulted in 10 people leaving. Customers that have eaten there several times. Very disappointed. I guess the resolution is if you have large parties and don't mind sitting separately...just don't act like you are together. We were lucky to be introduced to this gem when in Johnson City for a family event. Dinner on Friday on the patio was absolutely amazing. Great spot for our larger party and the service was perfect. Then, there was the food. I live in Nashville and love the restaurant scene we've created but I'd be hard tasked to find the flavors and culinary artistry that I found at Timber. Our group basically took a tour of the menu and there were so many standouts. We fought over the corn ribs. Who would ever thought about putting white bbq sauce on corn, genius. The beet salad, was actually a real beet salad, not a few sliced beets on a bed of lettuce, delicious. I will dream about the white bean fritters on the veggie platter, not to take anything away from the accompanying eggplant. Then there was the crispy rice salad. The consistency and the flavors were amazing. As luck would have it the following day they catered our family event, what a treat!! The trout dip, farrow salad, chicken salad and curried vegetables were all 5+ stars. Thank goodness we had leftovers and I can continue to enjoy these goodies! Then there were the cocktails, what a great job. The West Walnut was my favorite but everyone was absolutely delighted by their choices.
