Chef Tim was the highlight of our son's wedding/elopement celebration party that we had at our home. We had a meeting beforehand to discuss details and plans. I had the privilege to try out Chef Meevasin's seafood paella at the Yelp Home away from Home Charity event and I must say it was the best Paella I have ever tasted. His presentation of the whole cooking process was beautiful, all the colors in the dish is an art form, and definitely had me swooning. I never experienced a personal chef's skills and services nor had the pleasure in someone else's home, but after meeting Tim and tasting his food, I am officially hooked! My girlfriends and I had our annual girls' weekend planned in Truckee and really wanted a no fuss, relaxing weekend. The homeowner had mentioned Tim before, but we did not contact him in time in the past. This time we planned in advance and booked him a good 5+ months ahead of time. He was super nice, accommodating to any dietary needs and restrictions, and very easy to communicate with over email. We confirmed a final menu, gave a deposit (half the amount due, not including tax or tip), and anxiously awaited our weekend. Omg Tim was a dream come true! Not only does he bring ALL of his own tools and equipment, but leaves the kitchen cleaner than when he first arrived! We had no problem cleaning up, but he was a total gem going above and beyond in the kitchen before, during, and after our evening. He presented in a cooking class style, set up stations, and had us make part of the 3rd and 4th courses in addition to teaching us basic knife skills and other cooking/baking tips. 1st course was appetizers: assorted cheeses and crackers, sautéed mushrooms in phyllo cups, and balsamic glazed caprese bites. 2nd course was a poached halibut atop mango salsa on a wanton. 3rd course was chicken Marsala atop fresh pasta we made during the lesson. 4th course was a flourless chocolate cake, we also made during the lesson, with raspberry sauce and amaretto whipped cream. Everything was absolutely delicious and pretty easy to make! We had so much fun and definitely plan on contacting him again for next year's weekend for his paella evening and create a Spanish theme. Tim provided the appetizers for an event we hosted this weekend and he knocked it out of the park! We had the chorizo and chicken paella and everyone was over the moon about how delicious it was. It's time that I embrace it: I am a Tim Meevasin fanboy. I have taken several classes from Tim at a local culinary center (where he occasionally teaches) on everything from braising to sushi. I have been to two events that he has catered for around 100 people each: one featuring grilled tri tip and pasta salad (EXCELLENT) and one with Thai fried rice and turkey lettuce wraps (INCREDIBLE). As the night progressed, guests were able to see the team cooking in the back, which was a great experience because many of the guests had never seen paella cooked in 40+ inch pans! It was a beautiful presentation. Moreover, Tim and his team were very attentive to all 50 guests and they even took time in between cooking to serve appetizers, refill the water station, and meet guests. Once dinner was served, there wasn't a single plate that wasn't completely full of paella. Chef Tim is a perfect example of somebody who takes pride in what they do and honestly enjoys doing it! We hired Tim to cook for our wedding of about 30 people in a rental house in South Lake Tahoe, and he went so far above and beyond of what we could have hoped for in a personal chef! About six months before the wedding we had a Skype chat with Tim to discuss menu options and logistics, and all of our worries about the food were immediately gone. Tim is such an easy guy to get along with and his enthusiasm really made it apparent that he was the right person for the job. Just during the first meeting with Tim we could tell he had a great understanding of how different menu items would bring different moods and tastes to the event. He was very willing to accommodate menu tweaks and even willing to create special dishes for diet and allergy guests at our wedding. For the big day of our wedding Tim was very well prepared, friendly, and helpful! It was very easy to tell that he had a handle on the food preparation and we were in good hands. Tim was able to bring everything he was going to need to cook with into the rental house and prepare the food in the kitchen there. He had a well thought out prep and cooking schedule done ahead of time so that he and his assistant could stay on schedule. The day of the wedding is where Tim and his assistant really went so above and beyond! Small things like having an extra pair of scissors to help with wedding setup, to being willing to do napkin rolls for us, to even surprising us with an amazing cake at the end! His energy and happiness in the kitchen just made everybody in the house a lot more at ease and a lot happier. And most importantly THE FOOD! Oh my gosh the food was so good!!! When Tim and his assistant arrived to the house to cook dinner they arrived with baskets full of fresh produce and meets. It looked like a farmers market just unloaded in our kitchen. We picked a summer themed menu which included grilled peach crostini as well as pineapple, pepper, sausage skewers for appetizers. The dinner included spinach strawberry salad, wild rice pilaf, grilled lemon butter asparagus, and grilled tri-tip that was freshly carved for each guest. Every part of the menu was perfectly prepared and served hot even though we arrived at the reception late! Tim was also kind enough to save a set of the appetizers for us since we were taking pictures after the wedding ceremony! Every person at the wedding raved about how great the food was! Everybody ate to their hearts delight and was blown away with the quality of the food! For the dessert we ordered cupcakes from a bakery in Sacramento, but Tim setup the whole dessert display after the dinner was done. He also even made a small triple dark chocolate cake for us just as a surprise at the end of the night! That's truly just the kind of excellent service he has! Any time that we would get bummed out about wedding planning hassles, we would always remind ourselves that Tim was going to be cooking for us and it always made us happier! Yesterday, Tim came over to my friend's house and hosted a wonderful dinner/cooking class for our small group of five. We were hesitant and unsure if it would be a good experience as we'd never hired a personal chef before. Tim is amazing! He made everything fresh, and patiently taught us how to make homemade pasta and a flourless chocolate cake. Chef Tim prepared meals for me and my husband for a month while I was recovering from shoulder surgery. He was simply wonderful! Incredibly easy to work with, super efficient and a fabulous chef. You get a LOT for your money. I also hired him to give a cooking lesson to my husband and his two twenty-something sons as a Christmas present. The lesson took place on New Year's Day and they prepared Tim's famous Paella. The result was a fabulous meal for us and guests including appetizer, entree and dessert, and the boys had a ball. Tim's a natural teacher (in fact he does teach classes locally), and much fun to be around. I highly recommend him and can't wait for our next project! read more
