What an absolute gem this place is. The food is not cheap but what it is for sure is amazing. You definitely get what you pay for. The Prime Time prime rib sandwich was the best sandwich I've ever eaten in KC and the mac and cheese was out of this world. The place was spotless and customer service was fast and super-friendly. I was also very fortunate to meet the owner and her lovely grandmother. I was very impressed by both of them. Not only by their kindness and the effort they put into making 100% sure I was happy with everything but the fact that they are there every day all day long working alongside their employees overseeing things to ensure that their business is being ran at an optimal level. These people know what they're doing and I will be looking forward to coming back many more times in the future.

Honest review. This place is not worth it. 1. Do NOT get the Chiefsteak. My husband orders these everywhere we go and he is an easy to please type of guy so when he looked and me and said this was the worst he has ever had, I had to try it myself because it "looked" great. But omg he was right. I don't know how they managed it, but there was absolutely no flavor whatsoever in the meat no beefy flavor no cheesy flavor no salt no nothing. All you could really taste are the onions and peppers. Hours later he was still talking about his disappointment. 2. The pastrami was OK. The pastrami did have good flavor. However, my sandwich was overwhelmed with the cabbage mixture and there were many parts of the sandwich that did not have any meat on it. In New York City the famous Katz deli you can get a pastrami sandwich loaded for $28 in NYC. Considering this is a $20 sandwich in Liberty MO, there's no reason for them to skimp on the pastrami. 3. I was there with my parents and my husband on a Saturday where they do a buy three sandwiches get a free plain burger, free, which was perfect because that's exactly what my father ordered when I mentioned to the cashier that we wanted to utilize that special, he got really annoyed and said well if you want that, I'm gonna have to re-ring everything back in and I said well yes that's what we want and he acted very annoyed by this. 4. All in all it was $109 even after one sandwich was comped and everything was just "ok" except the cheesesteak which was terrible. Would have rather gone to Arby's

Just as good as the videos make it seem! Found this place through their YouTube/Facebook videos, and couldn't resist! Had to get down to Liberty, to give them a try, and SO glad we did! First off, it is NOT your typical restaurant! It is actually a butcher shop that now makes food. Secondly, do not expect fast food! Each order is made fresh, so it takes time! But that leads to the third point, this is among the best quality food out there! Again, the videos didn't lie! I had the loaded fries, (HUGE) and onion rings, which were delicious, as well as way more than enough for at least 2 people (and I'm not a small guy). I had brisket on 1/2 and shrimp on the other 1/2 with queso cheese. Both meats were tender, and flavorful, as was the queso. It is very easy to believe that the fries are fresh cut each day, as they were nearly perfect. My wife had the surf, and turf quesadilla, and the chips and jalapeño popper dip. The quesadilla was equally delicious. The flavors of each item compliments the others perfectly. The popper dip has a pretty strong kick, so she wasn't a fan, but I really enjoyed it. We also got the brisket Rangoon, which I had only 1 issue, and that was that there weren't enough! I could make myself miserable on these things! They were AMAZING! Miranda said that they are new, so it is possible that they will figure out some miracle way to improve lol. The service was top notch, everyone was helpful and super friendly! Had a few nice conversations with different staff members, and they make you feel like family. Pricing was the only area where I was a little skeptical, until we tried the food! The sticker shock was there, but the quality of the food makes it well worth the price! Overall can't wait to go back and try more meals, and see what else they come up with!

small place if ur sitting to eat and it's cold out dress warm. The food is REALLY GOOD what a burger! WOW the prices aren't bad considering the quality of meats and it comes with a side this is gonna be hard to beat for a burger no frills no waiters it's counter order and they bring it to ur table in a to-go container with plastic silverware.

I found Upper Cut meat market today. I has been seeing a lot about this place so I set off on an adventure to find it today for lunch. So glad I did. It was worth the drive from Lee's Summit to Liberty to experience the best sandwich I have had in a very long time. I ordered the Prime Time. A guy in line said it was the best one and it didn't disappoint. The meat was very tender and tasty. With the added camelized onions and smoke mushrooms it was delicious. For me it is a two day sandwich that comes with ajus. Will try a different one next time.

Fresh food made to order. Sandwiches and portions are huge! Helpful and cheerful employees help you decide how to order, what to order and what their favorites are. I loved the extra little desserts available from bougie desserts in West bottoms available for purchase. Freezers and coolers have ready to take home sides and meat as well. As Northlanders, we love to support locally-owned restaurants in our community. We headed to Liberty to make our first visit to the Upper Cut. Upper Cut is a prime butcher shop, serving incredible sandwiches and sides. On our next visit, we got to buy some Akaushi prime beef for home. When we entered the restaurant, they have about six tables for those of us who want to savor the food right from the kitchen. Having checked out their website, this place serves huge, creative meat sandwiches. I narrowed the 10 sandwiches down to three (Royal Roast Beef, Big Chief BLT and The Kelce) and decided to go with the BLT. Although the prices range from $15.99 to $19.99, you are getting a huge sandwich. For many, it might be good for two meals. They have two sizes for the BLT, half a pound of bacon or a full pound. Since I love bacon, I went with the pound. The cashier said I might need to see a cardiologist after eating it. If I could make a suggestion, they should give you two sandwiches when you buy that much bacon. I never thought I could say this, but there was TOO MUCH bacon for one sandwich. But I will say this, the bacon is thick cut, smoky flavored and delish. The restaurant was pretty empty at 5:30pm on Tuesday, so I was surprised it took almost 25 minutes to prepare the sandwiches. I ordered fries with sandwich, but should have ordered their incredible Smoky Bacon Potato Salad. It has received rave reviews. I was surprised the restaurant doesn't cut your massive sandwich in half. The plastic knives and forks they provide aren't up to the challenge of the massive sandwiches. My wife ordered the Aka-strami (Pastrami) and loved it. Can't wait to return! Next time I'm getting The Kelce.

My girlfriend and I tried this establishment this evening. We arrived at a little after six in the evening they closed at seven. The menu is very large with lots of options. The staff was extremely friendly everyone from the person who took our order to the people that worked at the deli counter. The whole experience was top-notch. After ordering it took about 20 minutes to get our food and everything arrived hot and very tasty. I had a Wagyu burger and she had a sub sandwich. We tried the potato salad and the baked beans both were excellent. The baked beans were a little spicy, but not overpowering. The buns were had garlic and butter on them and the whole experience was very good. The seating is like eating inside a deli or maybe like a sub shop it's comfortable and you're not so close together that you feel like you're really in a conversation with the table next to you. On all this was a great night out and we would definitely recommend. Them being a deli they have lots of cut of meat that are available and we were thinking that this might be our place where we should get our meat going forward. If you are in the Liberty A area you should definitely look at these people up. it is a great business with great food.

Outstanding service and customer appreciation. The Akaushi steaks are absolutely amazing. Very fair prices and my wife and I were pleased to learn that the beef is raised and cut by the owners themselves. Each step of the process they are involved in. I am very excited to try more cuts and their selection of sausages and seasonings. I went ahead and bought some garlic butter seasoning and smoked applewood seasoning for the next time I get the smoker out. I can not say enough how high the quality of the beef is. It was cut with a fork tender. read more

This was my very first visit and the customer service alone made me want to shop. The guys in there were so nice and explained everything in detail to me. Since his was my first time I purchased 1 butcher blend burger, 1 cheesy type burger, beef bacon, stuffed mushrooms, and a steak burrito. My kids charmed their way into some complementary cake pops too. I'm regretting not purchasing more mushrooms. I've never had beef bacon so I will need to doctor it up but if you don't eat pork, you will enjoy this. It is a bit pricey; however, I don't mind paying a premium to support small business. I can't wait to try more. read more

Wow. Recently moved back to the KC area from Texas and have been on a quest for really good beef, primarily grass fed, wagyu or similar. Made the trek to Upper Cut KC today and were not disappointed. Purchased Akaushi strip steaks and made them for dinner. These are some of the best cuts of meat we have ever had! Texture like butter and flavor that needs very little seasoning. The customer service was second to none...Mariah took the time to explain every detail and answer every question we had (which were numerous). Each steak is cut to order and the rewards program is very generous. read more

I moved to KC from SF about 2.5 years ago. I wasnt sure what I was going to walk into with a butcher shop. I remember them as a kid but they are few and far between in SF. Let me tell you, it is one of the best finds I have had. I have spent way too much money there , but every penny was worth it in quality and service. I recommend Upper Cut to anyone I come across when the conversation turns to bbq. They are expanding with weekend specials and creations. It is great. Have I mentioned the service ? Everyone there is top notch ! Do yourself a favor , fire up the grill, go to upper cut and have one of the best meals you can ask for ! read more

My family heard about this place and we were excited to use them for our Fathers Day gathering. They were able to provide a feast for us with their selection of meats. The line was out the door so i know it was going to be good. The owner went above and beyond to make sure we were happy. I would recommend the burgers. I don't normally leave reviews unless it's horribly bad, the steaks here are over priced but fine, the peppered beef jerky was so bad I immediately spit it out and throw away the jerky before I even left the parking lot. I didn't know beef jerky could be so bad. In the past "bad" beef jerky was too dry and bland, but this "jerky" was paper thin crunchy with a horrible flavor that didn't taste like beef. Absolutely any gas station jerky is leaps and bounds better than this. Edit steak was poorly cut, one end was about 50% thicker than the other, came out ok in the end but I had a range of doneness from one end to the other read more

As stated before, this is the Best place for your meat needs in KC. They raise their own cattle, and know exactly how they are feed and treated. The staff is top notch, on my weekly trip there it is always a pleasure speaking with Matthew and Mariah. Matthew is well versed in the Kitchen, smoker, or where ever your cooking takes you. He is up front and honest with his recommendation, and will tell you when he isn't keen on something. I could spend years there and not know everything he knows. Mariah is no different and makes a mean brisket queso dip. The whole staff is knowledgeable and what they may lack from experience, the others have them covered. Do yourself a favor, and head there today and pick you weekly meat. You will keep going back. read more

I've really been trying to hit this place up more as I want to support local businesses. I find it to be kinda hit and miss. The quality of meat and pricing is good. I've compared the pricing to the grocery store variety of meats and it's only a hair higher. I'm fine with this since I know I am getting a more quality product. Where I feel it misses is when I need smaller portion sizes of larger cuts of meat. I tend to buy my proteins the day I want to cook them and on the larger cuts I simply don't need a 10lb cut of meat and they won't trim these down to more manageable portions for me since they say that have trouble selling the rest. I imagine I will use the Upper Cut more when grilling and smoking season comes about but for the winter I am guessing it won't be as much as I would have liked. read more

Where to start? Service is great, pricing is great and the steaks are the best. This place is a diamond in the rough! We have been getting steaks lately and we will never go to Hy-Vee again. We ordered fish for the first time and will pick up Friday. do yourself a favor and get your meat there! Also a local small business so support them. We went to Upper Cut today, Sunday 2/7/16, to visit with Kelsi and she, very graciously, explained the cuts and demonstrated to us that the cuts I bought are in fact t-bones and how the filet side can be smaller, dependent on where in the flank the cuts are made, I hope I am repeating that correctly, she also explained that while the previous information we had about t-bones is true, the steakhouse restaurants don't fully explain to their patrons how the filet side can be much smaller based on the above. Kelsi also gave us a package of summer sausage that they have begun to make! Thank you Kelsi for your patience and kindness. read more

I am a huge steak guy. Eat it several times a week and have eaten at almost every steakhouse in Kansas City. The Akaushi ribeye was the best steak I had ever had, and I cooked it! My significant other was equally impressed. I am concerned that it may have ruined steak for me, but I know where to find more. I had googled, read and dreamed about trying Wagyu beef, now I have and let me tell you it is legit! The gals were very helpful and nice. Now I need to get a deep freeze so I can get one of their package box deals. read more

I ordered a bundle and didn't get any ground beef they said it would be a couple days. Went in the store Saturday and there was ground beef sitting in egg crates on the floor but they said I could not have that. Then try to say take a couple lbs and you can get the rest later!! My point is why do they keep selling there ground beef when people that have already paid don't have there's?? After this I will never go back and I will make sure I tell everyone I know not to buy there!! I would have posted this on there Facebook page but they take down any negative reviews!! read more

I know I have sung your all's praises before but I wanted to make sure everyone knew just how wonderful you all are. This is THE BEST local butcher shop!! The staff is wonderful, knowledgeable, and just down right sweet. I've had one of their fantastic staff members stay later AND make me some of famous mignon burgers because they were already sold out. While there are many other options out there to get your meat, I can guarantee you that it's not farm fresh, local, or as good. LOVE, , THIS PLACE!! read more

I travel around the country and quit eating the overpriced prime steaks as I have yet to find one that compares to The Upper Cut Akaushi Ribeye cooked on my charcoal grill. read more

I visited this store for the first time today because my regular butcher is now closed due to COVID-19. The meat I bough was beautiful, I can't wait to get it on the grill. The store is clean, that staff is friendly and knowledgeable..I bought short ribs but told the butcher I really wanted 'plate ribs'...she told me what to do to get them...GREAT customer service!!! read more

Been in here several times now and finally a butcher shop/meat market that can listen and understand what I was looking for. I wanted beef ribs, not short ribs. Kelsi handed me off to Bob the butcher and he did a great job of listening to what I wanted. I wanted someone who would cut traditional beef ribs from the plate, not the chuck. Bob said it was no problem and he went right to work, cutting them exactly how I was hoping and expecting. He even took off the membrane on the back of the ribs as well so I didn't have to fight doing it myself. If you have never tried Akaushi beef before you should. It's on the same level as Japanese Kobe, or American Waygu. The beef is prized for it's fat marbling and anyone who knows anything about beef knows that fat = flavor. This beef is loaded with fat but not the bad kind, the good kind! That is beef code speak for eat this stuff and leave the rest at the supermarket. Now for how it tastes. It definitely has a more buttery taste than traditional beef and if you cook it correctly, it will be the juiciest piece of meat you have ever put in your mouth! It really doesn't need anything spice wise other than salt & pepper to enhance the flavor because the Akaushi beef is the captain of the ship. Give it a try & you won't be disappointed or hungry. read more

Wow. Wow. and yet another WOW! The wife and I tried out a KC Strip last night of the akaushi. Does it cost more, of course, but you get every single penny's worth in taste. I only lightly salted and peppered the steak and grilled to a nice medium. We both took a long time to finish it because we savored every bite!! Delicious local meat market with beef from a Missouri farm. Try it, do you your tastebuds the favor! read more

Gotta say, if I want to pick up some farm fresh meat this is my go to place. You get what you pay for. Frankly, my family has found that the value is better to buy a steak from The Upper Cut than to go to Capital Grill or another steakhouse and it's cheaper. read more

Stopped by here on a whim. I looked on Yelp for a butcher shop in the northland. As it turns out there's a little gem in Liberty. I got a sirloin steak for dinner. It was, hands down, the best steak I've ever cooked!!! Go there! 21 day dry aging for a supermarket price! read more

Always love the meats, and the beef jerky is one of the very best, fact is I drive out of the way to get my stock. Well the new owners had a change and have a new butcher. Not sure what happen to the old one (Bob) but there has been a noticeable change, fact is the jerky was horrible and If I haven't driven so far I would have taken it back. read more

I ordered online. When I went to pick up my order wasn't ready and was told orders aren't guaranteed til 6pm. I then asked about how long and was very rudely told by the gm that it would be ready by 6pm. When I ordered you have to check a box agreeing to their policies. I had done so and never read such a thing. I went back to my car and read it again as I didn't have time to wait. I saw no such language in it. So I went back in to get a refund. I waited while the gm finished with a customer and told her I am sorry I cannot wait another 2 1/2 hours and could I have a refund. I know it's been a long day for her as it being the Christmas season however in a rude tone I was told I agreed to orders being ready by 6pm. I told her no where on their agreement does it say that and if they weren't going to refund me I would just do a charge back on my card. I was then asked where I lived and the fact that I only live 20 min away shouldn't matter as I didn't have the time to come back. She then pulled out the computer to try to show me what I agreed to. She couldn't find it, so she got the owner. The owner couldn't find it also and took the computer back to the back and miraculously she found it. I told her I had screen shots of what I agreed to. She then was like well I can get it ready in 20 minutes and proceeded to tell me she didn't appreciate me being rude to her staff. I told her her gm was the one being rude I have been very reasonable. Then she let her gm berate me about how other orders are going to be put back in the schedule because I had to get mine now (although I heard the sweet kid who first helped me while talking to the gm say I thought all the orders for today were done). I waited the 20 minutes and got my order. I told the owner I didn't appreciate the deceit about the website fully expecting for her just to say I'm sorry I didn't realize it was wrong but she stuck to her guns and kept accusing me of being rude to her gm. I was going to let bygones be bygones because it is the holiday season and I know how stressful it can be. However on my way home I was texted a link to another set of policies. I am sure the food is going to be great however with their customer service I would never go back and wouldn't recommend anyone else to unless getting belittled is your thing. This is not your ordinary butcher shop. The folks here don't just sell meat, they raise the meat they sell. This is local small farm meat, not industrial meat from a food factory. No growth hormones, no antibiotics. Yes, you'll pay a bit more, but you will see and taste the difference. They also raise and sell a breed from Japan (Akaushi) that is known for excellent taste and healthy fat - Google it and read all about it. I purchased some ground Akaushi beef and their homemade brats for Memorial Day grilling. Wow. The burgers were absolutely delicious, and the brats were well seasoned and didn't seem as salty as grocery store brats. I can't wait to try their other selections. read more

My husband recently worked for them. It's a small business and they have been running for 10 plus years. He watched the manager drop food on the nasty floor then put it on the flat top. He quit and will never eat from the menu again. They do have quality steaks. That being said.. the kitchen is un organized and the tips don't go to the employees. Don't tip! The steak for the sandwiches is stuff they can't sell and is sour smelling. You'd think after 10+yrs in the biz you'd have stuff together. read more
