I can't judge the freshness of the seafood and raw stuff though it does look fresh. I was only able to stomach the lonely seafood soup while I was waiting for my 30 minute gourmet burger next door. The broth is noticeably clean/clear and very fishy at first sip. I can't say it's bad because it's difficult to mess up fresh seafood broth but I wouldn't say it's good or fantastic either. It's... okay, kinda, sorta seafood-ish. What it really lacks is depth and aromatics. Other than a few scantily twigs of cilantro, there wasn't much in the broth other than an unjustifiable amount of seafood. Now one would think with so much seafood alone it must be great. He says things like "complex flavor profile" then washes it down with a Diet Coke. I only managed a photo of the scallop before it disappeared into my stomach. Cooked to perfection. Sweet glaze on top. Delicate. Balanced. Honestly one of the better things I ate on the entire trip. What stood out most was the chef's style. No two plates looked the same.
