Also known as "Hing Gung" (慶功), it literally means to celebrate and to reward the hard work the crew put into the show. Much like sik siu, since the eaters are of high exertion, the food would most naturally be as trashy as can be~ Healthy eaters might want to hit the return button now as the foods may be despicably fattening. Deep fried is almost the golden rule for every trashy food, even in Hong Kong; the famous shrimp toast is actually minced shrimp smeared on a piece of bread and deep fried to crunchy perfection; and you got it, the piece of bread is soaked with grease. To make it even more damaging, mayonnaise is served on the side for you to dip the toast in. Damaging as it seems, but it is also very gratifying and is often the dish that is cleared the soonest. Hing Gung is often an event of the nights and there aren't a lot of joint cater to this batch of customers at this time of the day. I still remember walking into this shop with the waiter asking us to wait outside the shop at 11 in the evening, while they were trying hard to rearrange the tables to sit the 15 of us down. For a restaurant that is still crowded towards midnight, you know they must have done something right.

The menu is roughly split into three categories, the deep fries, the seafood, and other classic Cajun dishes. The deep fries bucket is madness. Pick your fries, your accompaniment (corn, curly fries, or potato wedges), and your favor, and you are set. Seriously, I could come here just for the deep fried chicken tenders, scallops or soft shell crabs. The seafood was great too. I tried the (whatever-I've-forgotten-the-name) crab, and the crawfish and the king crab legs. They were mental. It's probably due to the fact that it's my first time I ever had seafood in a traditional Cajun low country boil technique, but the rich in favor was certainly memorable. If there's one thing I had to nitpick, that would be the market price of the seafood. There is a tap and sink in the smack middle of the restaurant, which is very considerate; don't think I've seen any other seafood place in HK that would commit precious floor space to customer-comfort but non-revenue-generating furnishings. The menu is obviously tailored toward groups of four or more, with most portions made large for sharing - true to their ideology of family, friends, good food and great party. Some like their seafood with white wine, I like mine with beer, especially when it's hearty and Cajun! It's a little pity that they only have Carlsberg and three craft beers (Dirty Bastard, Big Wave and Great White). Be prepared to get your hands dirty digging into the seafood! But fear not for your clothes, for aprons are provided to keep you stain free. The flavors are big and bold and do not disappoint! Seafood is fresh (obviously, they were still swimming in the tank before I picked) and mostly imported. While I think the menu can be expanded to include more options, what they already have is good and a decent base to expand upon. I will be coming back! P.S. Having said all that, I still think the seaside Chinese restaurants in Sai Kung / Lamma / Lei Yu Mun etc give the best seafood experience. This is Hong Kong after all. Since I and a few of us were early and while we're waiting for the rest of the party to arrive, different staff repeatedly rushed us to place an order. Yes, I appreciate the efficiency, but can't you also respect your customers' pace? The person who made the reservation hasn't even arrived yet! I must say, however, that they are very diligent about filling our drinks and clearing our plates. Then there comes the ridiculously priced plate of mantis shrimp. We ordered the pepper and salt mantis shrimp and the server suggested 4 pieces so we without much thought said okay. Man they were the best, biggest, juiciest mantis shrimp I've ever eaten! But guess what, each costs HKD 300 so just that plate alone costs $1200 (USD 150)!!! Holy crap. Way to reel us in on the expensive dish! What a surprise when we saw the bill! The soup is rich and flavorful, and the thinly-cut noodles offer a good bite. You can even request different cuts of duck with your noodles, or just get plain noodles if you wish. I always somehow end up here for a late dinner when returning from vacation. Service is hit or miss, with servers often rushing around and trying to get you out as quickly as possible. Local celebrities are known to frequent this restaurant, which explains the photos and signatures on the walls.

Our list of dishes included: Yeung Chow Fried Rice (揚州炒飯), Black Bean Clams (豉椒炒蜆), Salt and Pepper Fried Fish (椒鹽魚片), Shrimp w/ Eggs (蝦仁炒蛋), Tea Egg + Tofu (茶葉蛋豆腐), and Mantis "Pissing" Shrimp (攋尿蝦). The most underwhelming was the pissing shrimp, which a little meat and a lot of shells. When our bill ($780HKD) came out, there was a little bit of sticker shock. Not all is terrible. Despite the greasy and salty food, they were constantly coming back to make sure we had what we needed. There was no shortage of help and they took our feedback well, but chuckled when we noted the salt (Could it really have been MSG?). They have a bunch of tables and the turnover is quick enough to where even waiting isn't a big deal. Heck, there's even unlimited napkins here. Any HK'er would surely appreciate that. Anyone who is looking to drink will surely have it here -- there are beer girls walking around looking to sell by the bottle or by the bucket. Perhaps next time (if there even is one), that'll be the route I choose when I feel like people watching and drinking along Temple Street.

It's definitely beneficial to know the language and style of ordering before coming to one of the remaining restaurants in Hong Kong that will give you that old-school Hong Kong feel, where tables spill onto the street and extends down an alleyway. A friend of a friend brought us here on a Monday night after a long day of boating, so you can imagine how hungry we were! The moment we sat down (in a prime location: next to the where the butchers are slicing and dicing the freshly made roast pork, duck, etc.), our waiter, a older gentleman has tea and utensils ready and has a notepad out for our order. Now I can't tell you the actual name of each dish in Chinese, but please refer to my photos to reference the dish. (If need be, show your waiter the photo! You won't regret it.) Seasoned potatoes with steak: I believe this is the first thing on the menu, and with good reason! I don't know what kind of seasoning they used but the taste of these potatoes are out of this world. These are definitely not your run-of-the-mill sliced potatoes. I felt obligated to offer the last piece to my friends but breathed an internal sigh of relief when they declined and I was able to have it for myself. The steak was delicious as well, tender and just the right size to have with the potatoes! Seasoned crawfish with ginger and scallions: These are so fresh! You can walk right up the seafood market next door and ask for a pound of these crawfish to be cooked. There's a technique to eating these: rip off the head, then take the tail and pull lightly to separate the shell from the meat. Scallops with vermicelli: A giant scallop seasoned with cooked ginger and vermicelli. I practically inhaled this. The scallop and vermicelli both complemented each other; the subtle flavors of each mixed with the ginger. Roast Quail: Quail can be a bit difficult to eat, with many small bones, but it was worth it! The skin of the quail was flavorful and not too salty, and the meat tender. Battered Squid: I love seafood, particularly fried calamari, so if you're like me, you will love this dish! While similar to fried calamari, the batter for this squid is light and doesn't overwhelm the squid. The squid itself was perfectly chewy and not rubbery at all. Veggies with egg and preserved duck egg: Perfectly cooked veggies in a broth I would have loved some extra rice to pour into. The egg and preserved duck egg both add some extra kick to this dish. Fatty beef with broad noodles clay pot: I almost didn't think I could fit any more food into me, but I had to try it. The beef had just enough fat on it and was sliced thin enough to enjoy. The noodles and broth were delicious. 100% would recommend to a friend, a stranger, an enemy! The total came out to about 188 HKD each, between the 4 of us. Well worth it.

They are located in Four Seasons and the place is already packed once they are opened. Lastly, their dim sum menu is available on weekdays only. Baked pineapple bun with barbecue pork and pine nuts: This was like a combination of the pineapple bun nai wong bao and char siu bao. The pineapple bun is good with a sweet crunch top. The char siu was good and tender. There was a good balance between sweet and savory. Baked whole abalone puff with diced chicken: Elevated version of the traditional taro puff. The puff was soft and crispy. The diced chicken portion was small stuffed into the puff. It didn't have much flavor. The abalone on top was alright. Appearance wise, this was pretty cool to look at. Steamed lobster and scallop dumpling: Elevated version of the shumai. The lobster on top tasted like prawns not lobster. The taste was ok but it was fresh. This dish only serves 1 piece per order. Steamed shrimp dumplings with bamboo shoots: Pretty much like a typical shrimp dumpling at any other dim sum restaurant. Nothing special. Xiao Long Bao: The Xiao long bao was good. My favorite out of the others we tried here. The broth was hot and flavorful. The meat was very good and savory. Chilled mango and sago cream with pomelo: The dessert was refreshing. It has a light mango taste but no pomelo flavor. There were some tiny pieces of pomelo but didn't have any taste. It just adds texture. Overall, we had to order multiple of the same dim sum since we didn't reach the minimum of HK$500 per person. We were pretty full and were pretty much forced to get a couple desserts to reach the minimum. The minimum requirement is honestly ridiculous especially when we are dining with 3 people. Their dim sum was alright, nothing memorable. They use expensive ingredients but I didn't think it was anything special or mind blowing. The service was alright. They weren't attentive and were kind of stand-off ish when we requested for a seat by the window instead of the middle of the restaurant. I can see why they lost a Michelin star. If you want to try a 3 Michelin star and a Black Pearl recipient Chinese foods with dim sum, I recommend the Jade Dragon in Macau. An hour boat ride from HK. Their dim sum selection was very good with excellent service and beautiful interior and presentation.

I managed to find a spot for lunch at the last minute through a certain fish. Upon arriving at the restaurant, I found that there were more than two empty tables, but there were no available spots for lunch on Open Table. It is said that dim sum is only available at lunchtime! I ordered some recommended dim sum and dishes that received good reviews. To conclude, the crab shell dish was the most delicious, followed by the buns. The buns contain pine nuts, and the skin is very soft and tender, making the texture unique and delicious! The taste of the chicken soup recommended by everyone might be liked by foreigners, but personally, I found it a bit too rich. I still prefer traditional Chinese soup (a bit lighter). They also served dim sum after the meal which I felt was average. The rice noodle roll was quite innovative, filled with preserved vegetables and char siu, the first time I've had rice noodle roll with preserved vegetables. The abalone didn't impress me much. The must-try "unusual rice" was my first time having rice-shaped Italian pasta, which turned out to be fried noodles instead of fried rice. So when you can't decide whether to eat rice or noodles, you can have this. After expressing my thoughts, the staff waived the charge for this dish, which was quite generous and unexpected There are many drink options on the menu, and they are quite expensive! A bottle of plain water costs 110 Hong Kong dollars. The selection of alcoholic beverages is extensive, perhaps one of the standards for a Michelin restaurant. I ordered bubble tea because I liked it last time. I personally recommend the Hong Kong-exclusive rose bubble tea (the third one on the menu), which has a slightly sweet rose flavor, not too strong in tea taste, somewhat like a non-alcoholic rose bubble wine. The oolong tea bubble tea felt a bit too sour, with overly complex seasoning. The service was excellent, with staff coming over to refill tea at any time (your teacup must be nine-tenths full), and they also came over to inquire about the taste of the dishes, similar to foreign restaurants. I feel it's a restaurant suitable for foreigners to host guests. The overall taste is not bad, but not to the extent of being extremely delicious, and the value for money is not high. Without ordering fish or opening wine, the average cost per person should be around 1200+.
