The crust was thin and crispy through the middle but still soft and fluffy around the edges, with just the right amount of char from the wood-fired oven. The pepperoni was nice and crispy, the mushrooms were cooked well, and the fresh basil was a great addition. I was really happy with my choice for lunch and would definitely order from Dio Santo again the next time they're at my workplace. My curiosity got the best of me so I decided to stop by on Monday, November 21, 2022. The proprietor is from Columbia and serves dishes from his native country. I decided on his three empanada special for $8.00 and opted for a mix of chicken and beef. After a few minutes the empanadas were served piping hot with picante and tartar sauces included. The Columbian version of the empanada uses corn instead of wheat flour for its base and they were cooked to perfection. The empanadas had a crisp, light exterior with superbly seasoned chicken and beef fillings. The business owner was welcoming and friendly and I will definitely stop by in the future to try more items on his menu.
