The bun was incredibly fresh, light, and pillowy, while the pork belly was melt-in-your-mouth tender with the perfect balance of richness and tang from the kimchi. The pickled vegetables added a bright crunch that tasted incredibly fresh. We started with the salmon tartare, and it was phenomenal! Rich, buttery, bursting with flavor, and so good we were literally fighting over the last bite. And the scallop? Order one for each person. Seriously. It's far too delicious to share. It had just the right amount of heat, leaving the perfect lingering warmth that immediately made us want another. Do yourself a favor and give yourself enough time to work your way through the menu, because every dish we tried was outstanding. Each plate was thoughtfully curated, beautifully executed, and cooked to perfection. I like to call it the C³ trifecta: curated, created, and cooked. Without question, this is some of the best food we've had in a very long time. We can't wait to come back (when visiting) and continue eating our way through the rest of the menu.

Ambiance was great - super warm and welcoming which was magnified by the host. Super lovely. Then the wait staff. Whoever is hiring/training is doing a great job! Not drinking right now but the cocktail menu was super tempting. Every menu item sounded great. We got some help on ordering from our servers and Tanya picked ones she had enjoyed before. We also sat right beside the pick up window so it was fun seeing food come out! The food was fantastic. See pictures for what we ordered. Not sure if I can remember the names of everything but it was a perfect combo!!

Pacing for the 5 courses was also nice. Not the most extensive drinks menu, but what was on offer was good. Service was also excellent. Would absolutely recommend.

They're recognized as one of Canada's Best New Restaurants and discoveries so we decided to come here for one of my birthday celebratory dinners. While I do enjoy eating and sometimes trying new foods, I won't say that I'm an expert judge. I definitely don't have the most refined palate as some of you Yelpies do! :D So many dishes came out, many with ingredients I couldn't even begin to pronounce, that I definitely lost track of what I was eating. Canada ingredients are very nice and fresh though, I definitely tasted so many things in so many different ways. I can't honestly say I liked every single thing, but I enjoyed around 85% of it. The best part was when they came out with my dessert and handed me the BIGGEST knife to cut the smallest birthday dessert with. I loved that, I was dying of laughter and the ladies in the table behind me were so curious. The staff were so kind and present, making our experience very special. I definitely recommend them!

Fathom has been on my list for awhile now and I finally got to give it a try! Food is amazing! We…read moretried the calamari, seafood pasta, and the chicken. Seafood pasta doesn't come with mussels like it does at most of the other places in the same area but it was still good! Service was great we had Martin who was a beauty! Restaurant is located in the Hotel Grand Pacific and therefore is very nice inside. It has a sunroom at the front with tons of windows and fire pits inside which looks pretty nice! Something to note is some of the tables have couches as seats which is interesting and makes it a bit hard to eat at but wasn't a big deal for us. Definitely give it a try if you're in the mood for a heavy seafood menu!

Breakfast was good - yoghurts, continental style, etc. Recommend the pancakes (3 cakes) so you can try Alberta maple syrup. Dinner was a leisurely-paced (2hr) affair. Waiter was outstanding. Started with the Mezze platter with hummus. Unfortunately the hummus lacked flavor. The "short rib" wasn't a typical short rib. It was sous vide at 65 Celsius (~150 F) for a nice medium steak. A bit fatty but good overall. Ended with a chocolate torte, which was fantastic. Definitely come, if a bit pricey.
