Jimmy rules. He sharpened my Shun knife, a butcher knife, and a serrated knife perfectly. Seems counter intuitive but having sharper knives is so much safer! We regularly chop up chicken thighs to prep for grinding and our butcher knife easily cut through the bones with very minimal pressure. Highly recommend Jimmys business. Jim sharpened two sets of knives for me. My first pair was a cheap knife from Target. It was so sharp I stopped using my 100$ knives from William Sonoma. I contacted Jim about sharpening some kitchen knives- Jim emailed me right back and offered to sharpen them that same evening. That didn't work for me so we set on the next evening. We dropped the knives off and headed out to grab a bite to eat. Jim texted me in about 45-50 minutes to let me know the four knives were done. I used three of the four today and it was so nice to effortlessly slice through a ripe garden tomato, easily slice a lime with a somewhat toughened skin, and cut through a partially frozen piece of meat without sawing back and forth.
