I choose The Cutting Edge because of the combination of good prices, good reviews, and a single day of work time. The idea of being without my knives for 3-4 days was simply impossible, even if I had the time before my trip. I dropped them off yesterday afternoon and picked this up today. He was courteous, responsive, and also took the time to ask me to warn those using them that they were sharpened, so they didn't overdo the pressure and have issues. Sharp knives are safer, but not if you don't realize they are sharp and act accordingly! So far, I am perfectly happy with the quality of the service and the results of the work.

We dropped off a set of nearly 20 knives plus a hatchet that was as dull as a hammer. He said to give him 24 hours - in reality he only needed about 3 to get the job done. And when I got them back, every single one of them was like a brand new knife. Jimmy is a cut above - he even followed up after a few days to see how things were cutting. Send him a message on Yelp and he'll get right back to you. His workshop is at his house, so it's easy to make an appointment. Straight blades, serrated, scissors, swords, axes, hatchets, tools, whatever - if it's metal, Jimmy can put a razor sharp edge on it!

I was told by another professional knife sharpener that the edge of my knife blades were damaged by CF Sharpening, uneven. Jim (CFS) told me Japanese knives are more difficult to sharpen. I just wish I had known he wasn't experienced enough to sharpen them. Sadly, I am having to pay extra to get my knives repaired by another company, more reputable. I can only hope I get my knives repaired by Thanksgiving. Ugh!
