Definitely new since I left home. I was interested. Ambiance was wonderful. A good amount of seating with each sitting spot feelings mildly secluded, which is nice. No one wants their coffee shop gossip being overheard. And when you walk in, you're first greeted with that classic glass case of available pastries and goodies. It was hard to not just order one of each item. Service was nice. It was counter service, and they bring your order right to your table. Can't ask for better service than that. Nice folks, good small talk. And the food, it was delightful. We got a couple of fancy coffee drinks, which were well-flavored, not too sweet, and the iced one was presented in a mason jar. Classic. We also shared like four food items. The pull-apart monkey bread was sweet and dense and delicious. Don't order this if you're alone. You'll need help to finish it. Got a creme filled pull pastry thing. That was nice. Flakes for days. This was no rough puff. For the chocolate croissant, also known as a pain au chocolat. Again, very flakey, very buttery, the perfect touch of sweet chocolate. And a savory, massive scone. Bacon and chives, I think. Also very good. Crumbly. Overall, I was very surprised. There certainly wasn't anywhere like this in Pensacola when I lived here. This place is a quality bakery that could easily be found in a medium-sized city. I was so pleased and will definitely come back.

The scone was also good, but maybe less good than other things we left on the table. Need to come back here!

We ordered the savory bread pudding Benedict and the Bonita's lobster roll both came with hand cut Parmesan truffle fries. Let's start with the bread pudding. Wow, isn't your ordinary bread pudding. If you don't like bread pudding, you will love this one! It starts with a special type bread they make and thick cut bacon is baked all through it. Then it's topped with a poached egg with a special hollandaise sauce. Every bite was full of flavor and I hate I ate it so fast. The lobster roll was so tender and buttery. The roll was fresh a little toasty just enough for a little crunch when you bite. The fries, I never had hand cut fries that taste so good. The fresh Parmesan cheese and truffle oil took them over the top. They really take time to pay attention to detail. If you haven't eaten here yet, you must put this one high on your list. We started with the ricotta fig and pear appetizer, and oh my goodness, it was incredible--creamy, sweet, tangy, and perfectly balanced. Such a fresh and creative dish! For mains, my partner had the chili citrus glazed duck, and it was cooked to perfection: crispy skin, juicy meat, and that glaze brought such bright, zesty flavors that paired beautifully with the sides. I went with the cobia almondine, and it was one of the best fish dishes I've had--perfectly seared, flaky, with the brown butter, almonds, and charred lemon elevating every bite. The cauliflower purée underneath was silky and delicious. We couldn't stop at just dinner--we shared a few desserts (the variety was tempting!), and everything was spot-on: rich, not too sweet, and beautifully presented. The service was truly amazing--our server was attentive, knowledgeable about the menu, and made great recommendations without being pushy. They really made us feel taken care of. If you're looking for elevated, ingredient-driven food with Southern-meets-French flair in Pensacola, George Bistro is a must-try. We'll definitely be back soon--maybe for brunch next time!
