Tucked in uptown Waterloo is a Korean dessert shop, serving Bingsu! This is a snowy fluffy dessert with toppings - snow with toppings. Who wouldn't love that? They come in various flavours including the traditional Injeolmi, which has a good dusting of soy bean powder, rice cakes and topped with red bean paste. This is really good for those who don't want something too sweet. The red bean gives the shaved ice a bit of sweetness. Rice cakes are chewy and sweet as well. The soybean powder gives it a nice nutty flavour. They have an assortment of bubble teas and regular teas as well as cakes and waffles. The brown sugar milk tea is very creamy. Light tea flavour. The tapioca is soft and chewy and you're able to adjust the sugar and ice level. Super nice and bright atmosphere. Beautiful decor and the sense of comfort and home.

I love The Bingsu! Both times I've visited the bingsu was really good :) I've triee the strawberry cheesecake, mango, and injeolmi bingsu, my favourite being the mango and injeolmi. I love strawberry cheesecake and cheesecake flavoured frozen desserts so I had high hopes for the strawberry bingsu but there was wayyy to much shaved ice in comparison to the toppings and hardly any cheesecake included. The mango one had really tasty ice cream on top and the mango chunks were heavenly, almost tasting like candy. The injeolmi one was yummy with a subtler and nuttier flavour. Perfect if you like things less sweet. The tteok on top was soooo good! The ambience and service is just average. Portions are good. Music can be loud sometimes. I prefer to sit outside. I would recommend:)

Super fine shaved ice, which honestly feels like super airy & fluffy snow. Totally melt-in-your-mouth bingsu! I thought it was great value for the portions and toppings too. Tried their matcha almond and Injeolmi so far and I loved both!

This store is located in Uptown Waterloo and is the first bingsu store in the Waterloo region! I tried their mango shaved ice which had mango chunks, mango ice cream, and mango syrup, topped with almond flakes. I absolutely loved the mango all the flavours here and I found the almond flakes to be a perfect addition as it added a nice texture! The atmosphere is bright and homey. A bit tight in the seating area but it is overall very clean!

A staple dessert place that is slightly on the expensive side. Great for sharing. Mango sauce is a little too sweet

Had a tiramisu bingsu - flavours were rich, and the contrast o crunchy and creamy was perfect. Recommended!!

The sugar can not be adjusted for this one but it does not go overboard. Breaking the top and mixing it together in the end tastes amazing (middle) #2 Mango Splash with Aloe This drink was really refreshing and creamy. The taste of mango and hint of tea really brought it together. If you're feeling something more fruity then definitely go for this one. (Left) #3 Oreo Coffee Milk Tea This drink really tasted like an iced coffee. It was slightly bitter so it's good for coffee lovers. The Oreo bits were a nice addition to take away the bitterness. #4 Mixed Matcha and Oolong Waffle Ice-cream The waffle was hands down one of the best in waterloo. It was crunchy and soft on the inside. The oolong was a little overpowering but in a good way. Tastes similar to a fortune cookie. Although we could not taste the matcha as much. A must try out of all three!

The matcha smoothie was the highest quality of matcha I have ever tasted. I'm not an expert in matcha but I usually get the matcha Frappuccino at Starbucks and this surpassed that greatly. The creme brulee smoothie had a crisp top that you could slap, it was soooo tasty. Never had anything like that before. Definitely will be back!

We actually were in the area visiting and planned to go to Starbucks across the street but when we…read moreparked, I noticed Pilot Coffee Roasters so we decided to stop there instead since it's not usually within reach for us. As we walked in, I noticed the open concept and minimal decor and fell in love with it! We were greeted by both the employees working right away and I must say, the customer service was perhaps the best part of the entire experience. We were never rushed to order as they gave us plenty of time to debate the menu and when it came time to order, the gentleman was very thorough and helpful with the sizes of drinks, explaining the milk alternatives which are free of charge, order was clarified to ensure it was correct - all in all, you could feel he took his time to get things right for us. When our iced matcha beverages were handed off, he realized he didn't let us know they come Una's a default and there, he offered simple syrup or vanilla syrup of our choosing since we do prefer our matcha sweetened. After tasting, we told him two pumps wasn't sweet enough and he kindly added more syrup for us. I personally ordered the seasonal white chocolate matcha as a hot beverage which was tasty but a little too sweet - I would request for half sweet next time. I also got the sea salt chocolate chip cookie as I couldn't resist (it looked so good in the pastry display!) It turned out to be absolutely delicious - the edges being the best part. My mom said it paired well with her Americano which was made with their Heritage blend. Speaking of which, before my mom ordered her coffee, she was offered to try their brew before buying which was really helpful as it ended up being too acidic for her. The Heritage blend was much more her preference with the nutty notes. All in all, a nice place to study and/or grab a coffee and snack to go! I'd highly recommend anyone to visit if in the area.
