The Duncannon Smoked Salmon, Gribiche and Fennel appetizer was the finest combination of freshness, with each accenting the other perfectly. The cod with Jerusalem artichokes was also perfectly divine, and had got to be one of my favorite preparations of cod ever. The sample of Irish cheeses closed the meal for me on the right note. Honestly, anyone on Waterford should try this place out - truly an incredible culinary experience! If they fix some of the service slowness, Michelin one star is within their reach!

Stayed at Dooley's hotel for the weekend at Waterford, and had two dinners here. Both were very…read morepleasant experience. First night I had a seafood combo: the seafood chowder, and the baked John Dory special with mash, fennels and potatoes. The seafood chowder had rich and velvety texture, great flavor profile, and generous portions of assorted seafood. All tasted fresh with bouncy texture, but some of the mussels could use a bit more cleaning. Baked John Dory was a great dish. The fillet was baked to perfection, with briny and refreshing taste, spot-on moisture, and silky mouthfeel. The mash and the potatoes were great addition to the dish. My only wish was to replace the fennels with something more refreshing and less dry. Second night I had the roast beef. Portion size was HUGE for the price. Taste was good, very moist beef with rich gravy. Wish they could have seasoned the vegetables a bit more. Overall, a good restaurant, reasonably priced, convenient for hotel residents. Also the bar was not bad with a nice range of spirits line up.

The soup of the day was supposed to be a beef soup, but it was more creamy rather than a broth, and had no resemblance to beef. It was still good, but I couldn't decipher the ingredients. I had the Supreme Chicken, which was tasty, but I wasn't a fan of the sausage slice that came with it. It just didn't seem to go with the rest of the dish. I could have used more gravy because the chicken was a bit dry. Since we were a large group on the excursion, I didn't ask for more since the servers were very busy. For dessert, we had crumble cake served with crème anglaise & vanilla ice cream. In my opinion, it was very dry, despite the ice cream.

The chowder base had good texture, and the fish chunks and shrimps tasted fresh, but some of the mussels tasted like they were not properly cleaned and drained with strong seawater bitterness and fishiness. Thai yellow curry: portion size looks about right for the price, curry flavor was great, not overly spicy but rich enough. Seafood again had the same issue as the chowder: good shrimps and fish chunks but some foul taste in clams and mussels. Brownie: saved some points for the restaurant. Intense chocolate flavor. Overall, food was OK but pricy. Also needs some more attention to details.

Luscious tomato sauce accented by meaty tang & spice from just the right amount of three delicious sausages, accented by creamy mozzarella. Really a perfect pizza. Delicious ingredients, perfect balance, and melty soft in the center. Second visit: wondering what to get, and the table next to me had the Prosciutto e Funghi (which was loaded with prosciutto but not so much sauce), the Carbonara (which was an ocean of cream and egg - - it looked big time heavyweight - - and she could not finish it), and the Quattro Formaggi, which also looked loaded with cheese. I got the Quattro Formaggi, with the additional bacon. This pizza was indeed an ingredient bomb. A sea of cheese, so much so that it seemed to all blend together. Covered with strip after strip of bacon. Both pizzas were superbly crafted, using fine ingredients. The Alla Diavola was classic neapolitan, the proportions all perfect - - dreamworthy. The pizzas the second night were of another order - - huge quantities of ingredients, and extemely 'rich', which, I imagine, also satisfies a particular clientele, though for me, it's more brushstrokes of artistry that satisfy. Fantastic pizzeria. Top-drawer ingredients, creativity and art in production, great people & service, pleasant interior. It would be really hard for me to find a reason to eat anywhere else in Waterford.
