We would have never known about it, except after dining at the Red Rocker restaurant. The grounds are lovely and are shaded with large trees and have seating underneath them. There's also an outside patio where customers can enjoy their food. We opted for the seating inside and I had a delicious everything bagel with lox, cream cheese and capers. Dave had eggs, sausage and cheese on an everything bagel too. There was a continuous line of customers buying bakery stuff and getting coffee. The atmosphere is so homey and pleasant that it a pleasure to eat there.

While some of their pastries look decent, there is something about their Viennoiserie (laminated dough) products that they just seem to not understand. Every one of their croissants I've tried were underproved, which causes an undesirable internal texture that is dense and not open and light like croissants are supposed to be. They are also very "bread like", which shows that they are losing control of the temperature of the dough and butter during the lamination process. This causes the butter to melt into the dough, rather than keeping the intended layers. This is what causes the crumb of the croissant to be more bread like, rather than the light honeycomb structure you find in a well-crafted croissant. Their other products, assorted buns, cinnamon rolls, etc., look decent, but I haven't tried much of those as they aren't really what I enjoy. I hope at some point they can dial in their understanding of the laminated dough process as it would only elevate and improve what they offer. However, they seem to be busy, so they may be fine with delivering a lower quality product in that department. I also understand that my perspective may be different than the average customer as I'm a professional pastry chef and consultant. I'm not sharing this review to be negative, but to give an honest opinion that may spark this establishment to look deeper into their process and find ways to offer even more to their customers.

So delicious and slathered with butter We actually stop on the way to the airport and get at least 2 dozen of Honeybee's rolls for the flight home. We used to get only 1 dozen but I've never made it back to Cali without at least one passenger bartering for a few.. it's become a thing! fresh, buttery rolls on a plane is the adult equivalent to getting to stop at McDonald's for a Happy Meal on the way back to school from a doctors appointment; you're literally king for the day! My favorite barter-to-date is a few visits ago when our group was all separated on the plane. The ladies I was sitting next to ordered me a buffalo chicken wrap and a mimosa in exchange for a dozen of my precious dinner rolls ‍ Long story long, Honeybee's has not only made my visits to Tennessee even more special, they've pulled off making the long flight home fun too! I am for sure a lifelong fan!!! I'm so happy Honeybee's was able to not only survive during the pandemic, but become exceedingly popular!
