Our family used to be big fans of the eclairs from Elite Bakery since last year when my god mother ordered their eclairs for her husband's birthday, and my mother was a huge fan of the raspberry eclairs. They were a big hit at the party as well. When we heard that we would be having Elite Bakery's eclairs again for my sister-in-laws birthday, we were so excited and couldn't wait to try them again. Unfortunately it was a big let down. It seems the baker had to make budget cuts on the ingredients and changed the recipe completely of the dough, the cremes and of the topping on top of the eclairs. The dough now tastes tough, dry, and the overall flavor is lackluster. The cremes used to be very light and airy with a nice taste of whichever flavor they were inspired by, but now tastes very heavy and doesn't have much flavor at all. The toppings used to be a light layer of white chocolate with whichever flavor it was inspired by, but now it's a heavy glaze that seems to be made of gelatin and it's heavily colored with artificial colors. Yes the look of the eclairs is very aesthetically pleasing with the gold details, but at the expense of the flavor, they are lying to their customers. We will not be returning here, especially not for these price points.

We got their pumpkin bread, coffee cake, mini muffins, homemade pop tarts, scones, and English muffin bread. Everything was delicious. The real standouts were the English muffin bread and pumpkin loaf (seasonal). The English muffin bread was dense but chewy with an English muffin texted and tasty crust. Toasted with butter and jam, it was delicious. The pumpkin bread was very light and super moist. Would love to go back during their normal business hours to try more treats!

I mean, these are incredible works of art! She's so talented! Most recently I attended a bridal shower and I was taken a back by the detail in this lovely three tier, three flavor cake that matched the bride's wedding colors perfectly. The delicate nature of the ombré layers of chiffon ruffles on the bottom tier were absolutely incredible! The all sugar monogram at the top was flawless and the polka dots were perfect, and had edible bold, shimmery glitter! It was an outstanding cake! Most of these fancy decorated cakes I have come to find only look good and lack greatly when it comes to taste. This is not the case with Karolyn's masterpieces. Everyone "oohed" and "ahhed" while they tasted each of the different layers in one cake...chocolate cake with chocolate icing, raspberry vanilla pound, and chocolate chip with buttercream. I tasted the icing on the raspberry slice at it was soooo delish!! Like omg delish. This mama who has had such bad experiences with birthday cakes over years that she swore off these types of places is considering using Karolyn's because of everyone's reaction and how gorgeous this last cake was! My intention was to keep them at the house in case I had any unexpected visitors who stopped by around Christmas. This was an epic fail because once I tried one cookie I was hooked. I. Ate. Every. The guests raved about how good it was. He made the whole process so easy for us and i couldn't be morw thankful. If anything else went wrong on our wedding day at least the cake went right! From first contact with paul to the cutting of the cake. Paul truly has a passion for what he does amd you cant beat the prices! Support this small business! Thanks again paul!
