On the food side, Palacio cooks their red Chile for over 8 hours, making it in my opinion one of the best and most flavorful in Santa Fe. Most other places I get Christmas style, but here, the red Chile is just perfect. On this trip, we had a smothered breakfast burrito and enchiladas suizas.
