So we made our way to Tractor Supply, where they typically set up shop, to do just that! STAR #1 - Convenient! They are set up at Tractor Supply in Bennett, Tuesday through Saturday for your consome loving enjoyment. STAR #2 - La Unica Birria de Res 2 offers up a variety of dishes including, street tacos, quesabirria tacos, quesadilla, tortas, burritos, and... wait for it - birria ramen! Yum! They also have a small selection of glass bottled sodas such as Coke, Fanta, Sprite and Jarritos. STAR #3 - The flavors were so good! I noshed on two shredded beef quesabirria tacos, consome for dipping, and an order of the birria ramen. My husband noshed on four street tacos: two chicken, a steak, and a pork. We loved everything! The tacos came with lime slices and a selection of 3 salsas. STAR #4 - The staff was super friendly. I was debating my protein choice, steak or shredded beef, for my tacos and she expertly suggested the shredded beef. Don't be afraid to ask for tips. They're happy to help! STAR #5 - Pricing was on point. At $3 a piece for the street tacos, $4 a piece for the queasbirria tacos, and $14 for the birria ramen, I'd have to say they know their market. Don't be shy with the napkins, because you are going to need them! I mean this in the best way possible. La Unica Birria de Res 2 definitely satisfied our Mexican street food cravings. I can't wait to go back! **Pro Tip: If you head there on the 1st, 3rd, or 5th Saturday of the month you can check out many other local vendors too!

My biggest complaint about the food is the salt. The tortilla tasted like it had been crusted in salt. I had to take a drink with each bite in order to eat it. I'm not sure if they use salt to clean the grill and then I was the unlucky guy who ordered first? My friend tasted salt, but wasn't overpowered by it. His food came out after mine.

I can't wait to have it again and the lobster roll was packed with meat, not filler sauce and other items with small pieces of lobster. Our only "bummer" was it seemed the fish and chips were not something they made but came from a frozen package, that was a disappointment since their other menu options were from their own recipes and what we tasted our first time, was beyond "food truck" good! : ) definitely high restaurant quality and flavor. We hope they will keep coming back to Mountain Cowboy, as we really want to try the Maine Poutine, chili and more clam chowder!

Chef Mark had a steady line of folks ordering, was able to keep up, and best of all-the food was outstanding! As the neighborhood party planner, I can attest that Mark was super responsive to all communications. He brought his crew (his adult daughter) to assist. She was delightful:-) 5/5 stars for sure!

I got the Big Lily Mammoth crepe and I'm blown away by how good it was. Deceptively big portions and the crepe holder is a sturdy and perfect way to eat without getting your hands dirty. Pricing may seem high right off the bat, but these things are packed with ingredients and are worth it! I was given a buzzer and waited less than 5 minutes for my order to be ready! The staff was super friendly with big smiles all around and I didn't realize until looking back at photos that the guy was posing for the photo in the back holding up crepes, which is hilarious. Great attitudes, very quick turnaround time from ordering to receiving food and I would highly recommend trying these out if you see them! All their offerings sound delicious and based off my experience, I don't think you can go wrong with any of the choices.

It was definitely tasty, but it came out more warm than hot, which was a little disappointing. Flavor-wise it was good, just not something I'd rave about or go out of my way for again. Not sure the point of the 'slaw' as a base as it really wasn't edible. That said, the tater tots were delicious--crispy, well-seasoned, and honestly one of the highlights of the meal. Also worth noting, the wait time was short, which was a nice surprise. It is a bit on the pricey side for a food truck, but when you compare it to lobster dishes at a nicer sit-down restaurant, it's probably pretty comparable. Overall, glad we tried it, but it didn't totally live up to the hype for us.
