The Tripa needed a little more seasoning but texture was on point with a crispy exterior and soft melt in your mouth interior. The suadero was full of flavor, fatty, chewy, gamey, salty with hints of garlic. The campechano was a combination of delicious flavor with the chorizo shining through with spice and smokiness. On the other hand the beef steak had nice notes from the charr, seasoning and acidity from the lime. The highlight of the day was the alpastor it was probably seasoned, smoky, charred, with hints of spice from the salsas, acidity from the lime and topped off with fresh onion. The birria tacos were crispy and full of flavor. The tacos, man, they had homemade tortillas, which put them over and above any taco I've ever had. They have a nice variety of tacos, with a bunch of classic and modern versions. My go to order is the Al Pastor, Barbacoa, and the chips and salsa. The Al Pastor is one of the best versions I've had, with pineapple chunks enhancing the flavor from the crispy pork. The barbacoa is tender and fatty, an big punch of flavor. The red salsa that is super spicy as well. A bit too spicy for me, but has wonderful flavor. This place is looking to be our newest default taco place.
