This meal comes with one plate of sides... rice, beans, and the "mexican salad" which basically consists of iceberg lettuce, some pico, a small dollop of sour cream and guac. If you like any of those things a lot, get an extra side. I usually ask for an extra side of sour cream. Yum! We also ask for extra tortillas, which they gladly include without extra charge!! :) Now for the best part... QUESO! Maybe this tells you a lot about my very americanized view points when it comes to Mexican foods... ;) But I just think queso is a must!! Most of the time we just order a side of queso to accompany our fajitas, but on this specific trip in we got the queso fundido with chorizo! WOW! We used to order this ALL of the time at the old Mi Ranchito Tres out in Otsego, but alas, very tragically, they haven't been around in YEARS... they were such a fav! Los Amigo's take on this dish isn't what I remember from my earlier years, but it's still pretty darn delicious and it was a very nice addition to the fajitas!! You can put it in a tortilla alone, but I like it on a chip or slathered across my fajita meats in my tortilla with toppings - YUM! And if you like spice, don't sleep on the RED El Yucateco hot sauce on the table. That stuff is fire! ;) Both in great flavor and great kick! Start small if you aren't a fan of pretty decent spice level. I love several drops across the top of each fajita! YUM! Basically - this dinner is my love language!
