The only explanation I can come up with is that they don't want to risk wasting ingredients if they don't sell out. But what does it cost to make a couple of pancakes--maybe a dollar or two? My wife and I each grabbed something to bring home and enjoy a little later since we had breakfast nearby. My wife got their Tres Leche cake and absolutely loved it. While I got the Black Forest Petit Gâteau, that was perfectly rich yet balanced out and was good til the last bite. These two treats impressed us and now we know the quality this shop makes and look forward to coming back and trying more.
