Wow, I found another restaurant I've been to a few times and have never reviewed! This is a rare treat these days. Super Mario's food truck has been around for years, but in its nondescript location in the parking lot of The Cigarette Store it's not exactly in a hotspot like a brewery. But don't let that discourage you from checking it out next time you're craving some hot, soulful food. I always get the same thing: the Wonder Burrito. It's what they're famous for, and for good reason. Packed with your choice of fillings (yes, there's a vegetarian option - yay!) this thing is ginormous. I usually eat about 1/3 of it in my car then wrap it up and save the rest to munch on later. It's different than a "regular" burrito because they grill it right before serving it. I love the resulting crunchiness! It's not fancy, but Super M's it worth a slight detour off the beaten path for some tasty grub. And it's right around the corner from Structures Brewery, so it's a great spot to grab some lunch then bring it to the brewery to enjoy with a cold pint. Nom nom nom. read more

I tried their veggie burrito and it's probably the worst I've ever had. Stir fry veggies (cauliflower, cabbage, onion, and broccoli) barely cooked and hot rice and no beans. This is the kind of thing that gives vegetarians a bad name. I'd have been happy with rice and beans and cheese. Add some fajita veggies or avocado and seasoning and I'd be giving 5 stars. But who wants a tortilla full of rice and half raw stir fry vegetables? read more

All in all, a great place to get authentic El Salvadorian street food. It tastes like I imagine home style would. The pupusas are great and piping hot. My only criticism is how much rice is stuffed into their burritos. It's nice and filling... But soooooooo many carbs stuffed into a carb (tortilla). Like food trucks and an awesome burrito? You'll love this place. The only item I've ever had is the wonder burrito...and I can't imagine ever having anything else it's that good. It's a little bit of a different twist on a burrito as it has some cabbage in it - but the flavors are off the chart! Also, you really get your money's worth. At the food truck, last time I was there, $7 cash only including tax got me a huge burrito - didn't need much for dinner later that night. Go check it out - you'll be glad you did. Forgot to do a review of this food truck a couple months back! A coworker of mine found this truck and we all checked it out one day. One thing, cash only, secondly, it's a little bit pricier than some of the other trucks, but only by a dollar or two and I'd say for good reason. I opted for the chicken burrito. I found it more flavorful than others in town. It's quite different though. This used chunks of grilled chicken thigh as opposed to shredded breast, it was definitely meatier in texture. I also liked the thighs in this case because it didn't make the interior overly wet. My coworker had the pork, which was shredded. Looked good and he enjoyed it. There was also sautéed cabbage and a nice mix of green and red salsa, my favorite being the more acidic green. What I really like about this place is that they griddle the burritos after they're wrapped. It's a nice touch and ensures they stay nice and warm. read more

One of my all time favorites in Bellingham. I was introduced to this awesome taco truck/resturant when I was a kid and dropping my sister off at college. About 8 years later when I started at WWU myself their wonder burrito was still as good as I remembered, if not better. Now I HAVE to go here every time I visit Bellingham. I've never found another el Salvadorian truck that lives up to Super Mario's. I think I am in love with their Wonder Burrito. Usually, I look up reviews on Yelp prior to trying out food places and am slightly disappointed. Not all food lives up to the hype, ya know? But the Wonder Burrito.... mmm.... I'm salivating as I'm thinking about it. The tortilla was oh so soft... just melts in your mouth. I dunno what they put into the Wonder Burrito besides mexican rice, cheese, avocados, and the beef tongue I ordered, but it's definitely Wonder-ful! :D (Sorry, couldn't resist the pun) The green sauce was tasty and there were 2 types of red sauces, one more spicy and the other one mild. The sauces sometimes live in the refrigerated compartment to the side of the the truck, if you don't see them on the tables. The decor is simple - c'mon, folks! It's a food truck! With some plastic tables for people to sit around. The place was very clean and tidy though. Tongue tacos were fab too. The meat was flavourful and juicy, and mine also had lots of cilantro and fresh veggies. And there is something fun about going down to a food truck in the middle of nowhere in an abandoned gas station, ya know? Makes the burritos and tacos more yummy. Used to come here all the time in college and they have amazing burritos. We just drove all the way to Bellingham for the night and this was our first stop. We both ordered wonder asada burritos separately. They usually barely give you any meat anyways but this time neither of us had even a single piece of meat. We didn't go back to the truck to give them a chance to make it right but it was fairly disappointing. Super Mario's Wonder Burrito may just be the most awesome thing I've put in my mouth in a long, long time! This Salvadorian food truck, permanently parked under the awning of a defunct gas station, makes some damn tasty food-- plus it's fast and cheap. The Wonder Burrito (a layer of cheese, rice, beans, cilantro, onions, cabbage, sour cream, avocado and Asada, Chicken, Pork, Beef Tongue or veggie) is solidly built with a crispy on the outside yet still chewy flour tortilla. This thing is an entire meal that fits in your hand, and doesn't fall apart until the last few bites. Add some of their red and green sauces as you go, and it's nothing short of wonderful! All this for only $6.50 makes it one of the best values I've come across recently. Definitely looking forward to coming back for more the next time I'm in town! read more

This taco truck is one of the best I've tried. The top choice would certainly be the Wonder Burrito, with that special layer of fried cheese and beans baked onto the tortilla before all the ingredients are piled on. Don't get me wrong, the other food there is amazing as well, but something about that huge burrito gets me every time. Salvadorian Food Ok this is basically a Taco Truck in Bellingham across from Wilson Motors... but it's definitely WORTH it. I was with a group for a performance, and one of the people behind it got us all burritos from this place. It was an instant hit!!!!! And I was made an instant fan!!! I know I was until I went there. My co-workers came back from their lunch break one day with pupusas in hand and raves of Super Marios on their lips. I tried a small bite of pupusas with the green sauce. HEAVEN! I dragged my boyfriend there that week to check it out. He was worried that I was taking him to a seedy van stand, but those worries dissolved when he himself tasted the pupusas. We also ordered Wonder burritos. He had pork, I had veggie. They are a good size, well-seasoned and the sauces are the optimal condiment. I like the green one, but the red is also good. The people are always friendly and if you know what you want, you can call it in, so it will be ready when you get there. Don't think you can handle eating from a van? Way way WAY overrated! The Wonder Burrito is a pretty average burrito as far as what you can get in Bellingham; yeah they melt cheese in a different way but the ingredients are all pretty standard fare; the carne asada was actually very underwhelming, I've had much better carne asada in many different places. I was so disappointed after hearing nonstop how good the Wonder Burrito and the other food was here. The salsa was disappointing too. Both the green and red salsas were way too smokey and lacking flavor. I did eat the Pupusas at Super Mario's too and those weren't bad. The prices here are great however. My meal of three pupusas and one Wonder Burrito was actually around $10.00. Definitely not a bad place to stop if you're hungry. read more

Very slow and poor quality service. For a relatively easy to make food, the service was incredibly slow. It took 45 minutes for them to serve our three burritos and one tamale. And the crazy thing was, we were the only people in the restaurant when we arrived. The quality of the food matched that of the service. My daughter's tamale was reasonable in size but bland and soggy to the point of almost requiring a spoon to eat it. As for the burritos, they were bland except for the few bites that actually had meat in them. The only redeeming part of the food was the hot sauce options. When I have the time, and a HUGE appetite, Super Mario's taco truck is among my favorite places in the World. I am a big fan of legit Mexican food, and Super Mario's is as legit as it gets, except that it's Salvadorian, not Mexican. Always fresh, made on-the-spot, the food here is absolutely fantastic, which explains why lines of people will stand around waiting for it under the hottest sun and the most driving rain. It's worth it. They have my favorite salsa. It's hot, REAL hot, but the burn hurts SO good! Owned and operated by immigrants from (you guessed it) El Salvador, Super Mario's fresh, unique flavors are truly amazing. Don't forget to leave a little extra cash in the jar for the kids back home.
