They don't taste like the English muffins you're used to, because they're not. I think it's a fermented focaccia dough fried in clarified butter. So it's like a focaccia donut English muffin hybrid. And so what? They improved the standard English muffin, what's wrong with that? I was really never a big fan of English muffins anyway. Model Bakery has unfortunately made me an English muffin snob I guess. It totally lived up to the hype. Once I got toward the bottom, it made the coffee taste pretty grainy and unpleasant. I went back and asked if they could remake it, and the staff was kind enough to do so. Unfortunately, the second coffee still had a small amount of grounds at the bottom. It was much less than the first one, so I decided not to go back for a third time. I'm not sure if this was just an issue with the batch or the way the coffee was prepared that day, but it was a little disappointing, especially from a bakery with Bouchon's reputation. Aside from that, the coffee itself tasted good, the macarons were delicious, and I'm glad we stopped in.
