Can you smell the spices Fernandez? I remember long ago…read moreanother smoky plate like this Full of enchiladas Fernandez Ok, enough of that. I'm no ABBA fan and many won't even remember that song anyway. The point is, this is where I get some of my spices and blends for some of the Mexican cooking I do. And what little Mexican cooking I do has become legendary. Maybe not legendary but popular. Like I made enchiladas years ago and it has become our traditional Christmas dinner. The spices I get from Fernandez mix with flour, throw in a skillet with some oil, awaken the ground chile, keep the heat on and add water in small amounts as the roux grows and expands and before long you have a skillet full of smoky, spicy, delicious enchilada sauce. The filling is up to you. I usually poach chicken breasts in a white wine and chicken stock, shred it and then stew it with lots of onions, garlic, red, yellow, green and jalapeno peppers. Then I turn off the heat and throw in a bunch of baby spinach to wilt. And a bit of cilantro, but not too much. This is the filling for the enchiladas, along with cheese. Load a bunch of pans with those bad boys, smother in enchilada sauce and cheese, 20 minutes at 350 and lookout, the neighbors will be coming over to see what they are smelling!
