The alligator definitely has a fishy/briny taste to it initially. After you've eaten it you taste the lingering Cajun spices in your mouth. Black pepper WILD BOAR jerky - much more like "traditional" beef jerky, as the title would indicate, very strong black pepper flavor, hint of the smoke flavoring too - overall a good jerky, blindfolded I wouldn't tell the difference between this and beef.
