This was also my first bûche de Noël, and now the bar is impossibly high. The dark chocolate sponge was tender and filled with real whipped cream and the perfect hint of brandied cherries--beautifully balanced rather than overpowering. The chocolate mousse frosting and thin ganache glaze were flawless, and the decoration (meringue mushrooms and sugared cranberries) made it truly special.
