Cross-contact, shared fryers, marinades, and surfaces all matter. I walked in fully prepared to just eat a plain salad so I could enjoy a meal with my family. Instead, I had the most safe and normal restaurant experience since my diagnosis. When I asked our waitress, Esmeralda, about the chips, she didn't guess or brush me off. She took me seriously and brought Carley over to help. They honestly informed me the chips weren't safe due to a shared fryer. Instead of leaving me empty-handed, they brought out fresh, piping hot corn tortillas so I could dip salsa with my family. That might sound small to some, but it meant the world to me. Carley then went through the menu and offered to personally prepare my food separately to ensure it was safe. She checked ingredients instead of guessing and specially made me carne asada and chicken street tacos alongside a massive plate of safe refried beans. The food was absolutely delicious. For the first time in a long time, I didn't feel like a burden or the odd person out. The staff genuinely understood why my questions mattered and cared about feeding me safely. This isn't just a Celiac review, either, the rest of my family loved their food! Note for the Celiac community: El Pueblito is not a dedicated gluten-free facility, so always speak with the staff about current practices. But based on my experience, their protocol and awareness were exceptional. Thank you, Esmeralda and Carley, for treating me like a welcomed guest rather than a problem to be accommodated. We will absolutely be back!

My sister had said she enjoyed picking up food at El Pueblito but I needed to relax and be served. The restaurant and waiters were very warm and welcoming. The servings were abundant and we had leftovers for today's lunch meal. I've been traveling since July 19th and had been receiving bad service, cold food and tiny portions, at an expensive price. This restaurant beat all the other dining experiences in Missouri, Arkansas and Texas. I highly recommend this restaurant!
