What a delightful local bakery. We found easy parking and went into the small shop, decked out with a large counter to choose fresh or refrigerated items and then self serve items to grab from nearby shelving. Such cute cupcakes and cake pops hand decorated. The staff was helpful with answering questions and brought the Midwest kindness. Note that if you are vegan or lactose intolerant, this may not be the spot for you (understandably). We ordered: Pesto parm focaccia: incredible! We sliced and served it with an Italian meal and an olive oil dipping sauce and it was the highlight. Soft, fluffy, and flavorful. -bbq bacon biscuit sandwiches: very good! You can get them to heat them in their oven for you or you do it at home. Just a slight sweetness and hint of BBQ, which seems to have coated the crisp bacon. The biscuit is buttery, fluffy, and perfectly crumbly. Monster cookies: the kids loved these. They are PB oatmeal cookies with M&Ms. great taste, but I wish they were softer rather than crunchy. -Cinnamon roll: the roll itself was huge and very soft. We wished there had been more of the cinnamon/sugar filling in it. However, the frosting was to die for! Just a hint of cream cheese, great consistency (not too thin or thick), and not overwhelmingly sweet. This spot was pricey, but with food costs, it likely needs to be for them to function. Inside this open and bright shop, there's a well-lit bakery case where beautiful creations are displayed with clearly-marked names and prices of each type. There were also some items displayed on top of the bakery case, including a whole pie, macarons, muffins, and the like. They also have a separate display counter that contains pails of different flavors of their home-made ice cream and sorbet; there's a sign posted on top that shows its serving prices. Behind the front counters is the kitchen area where those creations are prepared. During a visit on late Friday afternoon, it seemed each type of item displayed inside that pastry creations case had a $6.50 price. A scoop of ice cream is $5. I noticed that a package of 6 cookies up on a shelf perpendicular to the front counter had a $9 price. My sister and I decided to get a hazelnut cream puff and the last slice of coconut cake (we both love coconut-related creations). And since we learned they make their own ice cream, we also ordered a scoop of vanilla. The young woman attending to us began to put the baked items in a box and we asked her to instead put them on a plate because we were going to enjoy them there in the shop (glass plates are available on a table along the wall in the customer self-service area, with plastic cutlery, napkins, and coffee-related condiments). She confusedly obliged and placed the items, each on its own small black plastic base, on top of the counter. We, then, picked up the 'handle' of each base and placed one on each plate, and then had the woman place the scoop of ice cream alongside the piece of cake. Total cost was just shy of $18. We perched ourselves on the soft, fake green grass in one of their front windows and tried our beautiful desserts. We spooned up some ice cream first because, well, it's ice cream and beginning its melting process. We found it 'crumbly' when trying to cut a piece with a spoon. Once in the mouth, we found it was icy, crystallized, kind of 'crunchy' - definitely not smooth and creamy. The flavor was nice - sweet and vanilla-y. First the coconut cake. It was a slice of about 3" high, 1" wide, and 4" long. We enjoyed the flavor, with a layer of frosting (or something) between two layers of cake, with some frosting on top, and then garnished with some shredded coconut; however, the texture of the cake was dense, stiff, tough. At the end of eating this piece of cake, we found it was anchored to its black plastic base with a dollop of thick raspberry jam (or something similar). We found the cream puff delightful in appearance and flavor, overall. I don't think it was "fresh", given there was no light crunch/crispness to the cream puff shell. However, the top of the shell had a coating of something which may have softened the shell's texture, and the contents of the shell were very creamy and tasty. This item was anchored to its black plastic base by a dollop of thick chocolatey fudge (or some similar). It was fun to check out this bakery with my sister and if we visit again, we'll stick with a cream puff (if available), or try something new. Some drawbacks about this place for me are the prices, the black plastic bases (throw-away) that are underneath each of (most of) their beautiful single-serve creations, and the plastic (throw away) cutlery. read more

I live in Hudson and have been to the St. Croix Baking Company in the past. I've always found it inviting with the pastries exceptional. I recently ordered a sheet cake (fun-fetti cake with a butter cream frosting) and 3 varieties of cookies (chocolate chip, cherry almond and snickerdoodles) for my mother-in-law's 100th birthday party. The cake was decorated beautifully and everything was absolutely delicious!!! I was also impressed with Chef Charles Froke. As a huge fan of patisseries and bakeries I was excited to see a new addition to Downtown Hudson's main Street area. Walking in you just know that this is not just a feast for the eyes but also for the palette. After perusing their offerings I decided to grab a cup coffee, a croissant and a lemon merengue tart. The coffee was a Guatemalan blend and was nice but I really enjoyed the flaky and buttery croissant. I excited to indulge in the lemon later on today. I checked out the new bakery - edible and tasty works of art! I'm really impressed with the pastries at the new bakery. I tried a bar, a scone, a muffin and a tiramisu. Everything was wonderful. They look so beautiful, I was reluctant to eat them! The left (north) wall has baked goods on shelves, more mundane items (compared to the main display cases) like bread and bags of giant cookies - yum! This place is a little too fancy for my taste. Personally, I prefer the more traditional main street American style bakery with big quantities of larger and less intricate and more economical pastries. So if I lived on Hudson, I'd probably shop here as a one-off, not as a regular thing. But I really appreciate what they're doing and I admire the baking skills. My first time in town and I had the opportunity to order a birthday cake and thanks God I chose this place! The cake was exquisite, it was a Vanilla cake but it was perfectly balanced, it wasn't too sweet but the icing make the cake perfect for those who love the sweetness. The decoration was also nicely made and they did it just in less than 4h. I also ordered a chocolate croissant, I couldn't resist the temptation to leave the store with trying something that. Everything smells and looked awesomely delicious. The baker and owner was very nice and gentle as well as the others two person on the place. Highly recommended, and I definitely will return. I ordered a 10" batman themed birthday cake for myself for my 22nd birthday. The decorations were great and the cake itself was delicious but the outside and inside frosting was flavorless. I ordered vanilla buttercream frosting. The black inside frosting had a gel consistency and was inedible due to it having no flavor at all. Before I tasted the cake, I thought the price point (about $70 with tax/tip) was really good for a custom cake but after tasting it, I think that was over priced. I am planning on trying some cupcakes at some point but don't have high hopes after my first experience with this bakery being bad. read more

Stopped in first time to buy a new home gift and a few things we wanted to try. Ended up giving it all away but did buy two snickerdoodles and focaccia bread just for us. You have probably baked or eaten snickerdoodle cookies but you have never had ones like these. The ones I make do not melt in your mouth, these did. Mine have a stronger flavor but I prefer St Croix Baking Company's flavor. The focaccia was requested by my better half. I don't eat much bread but I tried this. I don't even like focaccia but this had layers of flavor. With cheese and sun dried tomatoes on top, the proof of bread is in the bread itself. It was so good, I might go back to eating bread. I also bought some pastries for the new home folks and while things were being boxed up, feasted my eyes on the works of art, almost to good to eat they are so beautiful. This is not a typical bakery, this is high art and culinary excellence. Whenever you are in downtown Hudson, eating one place, shopping another, get into this bakery quick, before it's overrun with customers and you won't have a chance to linger over the showcases while you can't make up your mind what slice of heaven you want. read more

St. Croix Baking Company is undeniably one of the most remarkable hidden gems in Hudson, largely owing to these extremely high quality bakery items. I decided to go through St. Croix Baking for our wedding, as it was local. When I called to set up a tasting, the owner Charles was very helpful and got us set up no problem. He sent us with a ton of cupcakes and frosting flavors (tasting was to go because of Covid) to choose from. They were delicious and chose our flavors, very excited that we chose to go with him. I connected with him to tell him flavors and numbers, we ordered over a hundred cupcakes and a small two tiered cake for my husband and I, and he said he would reach out closer to the wedding to iron out any details including cupcake decorations and timing. Two weeks before our wedding I still hadn't heard anything so I decided to reach out myself. I told him who I was and that he was going to be doing my wedding treats, and he sounded surprised. I figured it's a small company, so he has a lot going on, it'll be okay. He asked in our conversation if we wanted to do a tasting, which we had done months ago, which set off another red flag for me. I explained that we had done one already, and that I had already sent over the flavors and numbers along with a picture of the cake decoration we wanted (simple fondant with buttercream flowers). He said okay and that we would connect closer to the wedding about more details. As we were two weeks away, I was very surprised that I needed to wait until even closer to make final decisions. I ended up calling a week before our wedding because I was feeling very uneasy about the situation. He was very hurried on the phone (it's a busy place, but I felt as a bride should be some sort of extra priority/time given), and quickly ran through the order. He asked what our wedding colors were and I said navy blue and sage green with pops of silver. He said he would decorate the cupcakes with those colors. He also mentioned that he would outline a place in the back of the cake for us to cut into. I figured this was either for him to appropriately decorate or as a balance situation for the top tier. When it came time to cut the cake, we sliced on the lines outlined and it sort of crumbled, it didn't come out as a slice which I found odd. The flavors were also wrong, we ordered white cake with chocolate frosting and the cake ended up as white cake with white frosting. The cake was decorated how we had asked, but the cupcakes were not. They included the navy toppings, but there was an assortment of green coloring and gold instead of silver. Again, this was frustrating as I felt like I wasn't heard or prioritized but I didn't let it bother me because the day as a whole was wonderful. Upon getting the cake home, I went to disassemble it to put the top tier in the freezer to eat on our one year anniversary as is tradition. This is when I discovered the top tier was a piece of styrofoam covered in fondant and icing. I was absolutely shocked, as we ordered a two tier cake, listed in an email , and got a styrofoam top tier. We decided to cut a couple of pieces of the bottom tier to save instead. When we went to cut it, we discovered that the bottom was styrofoam as well. The only part of the cake that was actually cake was the part that we cut. If we had cut just a 1/4 inch more on either side, we would have cut into styrofoam at our wedding. We were furious. We ordered a two tier cake, the email confirming the numbers and products listed a two tier cake, and what we got was all styrofoam. I went into the bakery the following Wednesday after our wedding (they're closed Monday and Tuesday) to voice my frustrations. Charles seemed to not care, and told me that's what I ordered. I told him I never would have ordered a styrofoam cake, and I don't know of any brides that would. I know of plenty of other couples that got married around the same time we did that paid the same price for their small cakes at other bakeries and got an actual two tier cake. He told me I was wrong, and that "everyone makes wedding cakes like that." I told him I was upset that we wouldn't have a top tier to save for our anniversary the next year, and he said to call him when it's our "anniversary" and he'd make us a cake. I declined the offer stating that I would go and purchase a cake from another bakery that could deliver what was originally ordered. I mentioned the frustration with the cupcake design as well, and referred to our phone conversation. He said no one complained about the cupcakes so it didn't matter. He stood with his arms crossed the whole conversation, acting like he didn't care. He said "what do you want then?" I told him I wanted a refund for the cake, so he handed me a $100 bill. I thanked him and mentioned that I felt bad for any other bride that had to go through this with him. His reply was that he felt sorry for anyone that had to deal with me. I was shocked and extremely insulted, and walked out the door . I will never go back to this shop, and don't recommend them for any wedding or large event after our awful experience. read more

Wow! My daughter and I just taste-tested the cinnamon and caramel bun as well as the raspberry danish. They are the best I have had - maybe ever. I have baked all my life and always try local bakeries so have a certain point of reference. The caramel roll in particular had a somewhat crunchy caramel glaze that melted into a chewy bite that complemented the lovely interior. Impressive. read more
