So after the last two times i thought I'd give it a chance, again thinking it was me! I 2" filets, and I must say tasteless. I've b going here for years. It can't be me. I've grilled, I've reversed seared, etc., I've tried it all, and still not cool!! I haven't priced them out (with otherplaces), however, I have zero thought of buying here again. When you walk in you take a number *on the left hand wall immediately by the door * and I assume it helps the staff get to people in a more organized way when it gets busy there but I went there on a weekday midday and it was very busy. The gentleman that assisted me was very helpful and patient as I had no idea what I was doing, just wanted 2 good steaks to take home. He explained the steaks to me, and helped me decide on a T bone & a another one which I cannot recall the name to,but its like a T-bones sister LOL. Anyways, I got a groupon for the steaks and paid the rest with cash, he packaged them for me and also gave me a rose for Valentine's day!! Such a sweet gesture. Of course, quality and price are also big considerations for me. Springfield Butcher scratches that itch. My girlfriend and I were hosting a dinner party and we wanted venison and pork belly. Most of the grocery stores that I went to (Whole Foods, Balduccis, Super H Mart) didn't have venison (fresh or frozen) or pork belly by the slab. Springfield Butcher did and was convenient for me to get to. The staff is friendly, knowledgeable and helpful. I had called ahead with my order and it was waiting for me exactly the way I wanted it. My one, small, critique is that the pork belly slab was frozen. Perhaps, with some advanced planning, I'll call to find out the next time they're cutting up pork belly and get some before they put it into the freezer. Tired of eating sad, lean ground beef in my homemade hamburgers so I ventured out to Springfield Butcher in search of a custom grind ground beef blend of 75/25 lean/fat. I called ahead on NYE to ask if I could get a custom blend and was told sure thing, come on in. They were closing early that day so I showed up an hour later, an hour til close. I asked for my custom blend and was told by the counter lady that it wouldn't be possible because they were closing soon. As soon as I mentioned I'd just called and spoken with someone she changed course and said that she'd double check with the butcher that he was still able to do it since they were wrapping up early for 2 days off. And he was! Great news. I had a nice chat with the counter lady during my short wait and let her know it was my first time in. The ground beef was done quickly and the price was right. I just stopped by with my aunt who was using her groupon. The store wasnt too crowded the Saturday before Christmas and everyone was pretty friendly. We were looking for a roast that would feed 15 people. The selection was a 12 pound roast, with an option to cut off 4 lbs but you might as well go all out and just stick with the 12lb roast. It is the holidays after all, might as well eat well! The store was larger than I thought and there is a lot of sports memorabilia. Prices for meat and prepared items seemed to be decently priced. Been to this location many times over years and make it a point to go when they offer the Groupon deals for a discount. As good as it gets for a local butcher shop here in the United States. The staff is fairly patient/attentive in taking time to answer questions of customers who lack fundamental social etiquette: including the "entitled" who like to cut in line, or jump ahead of, other adults waiting a turn; or, those who hold everyone else up with absurd questions about prices when the signs are clearly labelled in the showcase. The selection is always good and well-labelled so you know what you're getting, at what price, and they do try to be competitive. We like the game meat and some of the exotic selections on offer at different times of the year. Instead of responding in a rational or respectable manner, the employee on the phone instead asks my husband "ARE YOU F-ING JOKING?" My husband was stunned and said no, and the guy then responded "Do I sound like I have a red dot on my forehead? NO! So we are NOT open on THANKSGIVING!" and he then hung the phone up on my husband before he could respond. We are both the children of immigrants and I am still enraged over such close-minded and xenophobic treatment. I do not care what other professional qualities you have, anyone who treats new clients like this should be shunned and boycotted. Don't go here if you want cheap, crappy, low quality meat. That being said...This is a shop for high quality meats. A lot of the meats are dry aged. It does not look like meat you buy in the grocery store because it is part of the aging process that makes it more flavorful. The longer the age the more intense the flavors. It's not uncommon to dry age beef for up to a month...kinda like salami, proscuitto etc. If the beef looks dry and the color is deeper it just means that the flavor will be better. The meat you buy in the grocery store is usually a lower quality...that's why it is cheaper. Most meat in the grocery store is lower than choice grade. If you want "bang for your buck" then you are probably too cheap to appreciate the quality of meat they have here. The meat here is definitely a step above. We were there tonight...at 5:15pm (they close at 6pm) with a significant crowd...the night before a groupon special ended, with groupon in hand and were served quickly and professionally with no issues whatsoever. I found the customer service to be great and had no issues with pricing or redeeming my groupon. The sign at the door simply clarifies any questions regarding groupon redemption. I did not find it condescending or offensive at all. It was like an FAQ for groupon users in the store. Not everyone reads all the fine print when they buy so I feel like it was helpful to streamline the process and get lots of people in an out in a timely manner. read more

Alright so here's the deal, you should really only visit this place if you have an excellent deal or if you're trying to impress your husband/wife with your grilling skills on good cuts of meat. The times I've been here I've ONLY been when they've had a Groupon and when I leave I could feed my entire community (no joke). First things first DO NOT, I repeat DO NOT go here on the last day of your Groupon! You will be annoyed and upset with the service, the wait, and more importantly the cut of meat. Now, is this the best butcher in Springfield -- well its up there, but is it the best in Northern VA -- certainly not, but if you're looking for a better cut meat and you don't want to go to Whole Foods or even Harris Teeter then come here and get something to eat. I was just on the grill today and the filet mignon was pretty good and granted I don't think it was grassfed but they are still pretty good. The sausages and the Crabcakes -- good Lord the CRABCAKES are amazing. Seriously, I can't wait to bite into that tomorrow. I would recommend getting the bone in ribs as well. What you will find is that they do not use gloves however, from what I've observed I did see them use one hand for grabbing the meat and one hand on your credit card so bring a wet one to prevent this. I hesitate to write this now, since I have 2 Groupons still to use (or get a refund for, whichever). But I might as well. Where do I start... 1) Condescending sign for Groupon-holders at the door. 2) BARE HANDS handling my meat. This has gotta be a code violation. 3) Meat packaged on styrofoam plates like it's 1955. You can keep your leeching toxins, thanks, and give me some proper butcher paper. 4) Lack of general product variety/organic/grass-fed/free-range meat. I can get a better range of healthy meat at the Farmers Market once a week. 5) Are-you-kidding-level prices. 6) Plastic, recyclable numbers, which would probably be cooler if: a) the staff weren't handling them with the SAME BARE HANDS they just used on the meat; or b) if they hadn't been touched by the bare hands of the last infection-carrying customer; or c) if the germs on the numbers weren't surely going into the food that the staff is about to touch after grabbing the number out of my hand. E coli + MRSA threat level= high. 7) Did I mention that the same BARE HANDS handled my credit card? Now listen, back home in the Midwest, no one buys meat from anywhere other than the local butcher shop. I grew up in that place. I love the smell of that place. There are still things I buy only there, once a year. So I am more than happy to support a dying vocation and local small businesses. This is not the same thing. I have outlined the major problems with this shop above. I needed a rump roast for a crowd, so I decided to drive 20 mins out of my way to get it here after being assured that this place stocked grass-fed beef. Turns out, they only stock 3 cuts of grass-fed beef, not all of which are from the same part of the cow, which makes me wonder how they do their buying. Since I had to buy something, I grabbed 5 lbs of grass-fed ground beef (the cut of which was unspecified) at $5.99/lb. In fairness, their grass-fed selection is only slightly more expensive than it should be (like $1-2/lb, which only adds up if you're buying in bulk). But the other unhealthy cuts I saw in the case were farther out of range. I luckily did not have to deal with the oft-discussed rudeness from the staff. They were perfectly polite to me. But once I saw the bare hands, I frankly should have walked out. I was too distracted trying to find the "rest" of the grass-fed beef to think clearly. All of the beef in my shopping bag (5 1-lb packages) was leaking blood like it had just been stabbed. Luckily, I was smart enough to unpack it in the kitchen sink. I'm really hoping that the meat we bought isn't contaminated. Cross your fingers. I ended up getting my rump roast from Whole Foods, where the butcher cut it by hand, with gloves, while I watched, only charged me $4.99/lb, and packaged it beautifully leak-proof in butcher paper. So, the bottom-line is, I'm gonna have to find another small butcher. This place will not do. read more

This is a great butcher shop. I love all kinds of meat and seafood, and I know quality. Springfield Butcher's selection of meats, seafood, and sides is plentiful. Everything is fresh and tastes delicious. My favorite items are the stuffed pork chops, crab stuffed shrimps, crab stuffed mushrooms, crab stuffed tilapia, and the prime porterhouse. In addition to a wide selection and high quality food, the staff is excellent. I have been there several times and have never been let down by an employee. They are kind, caring, know what they're doing, and they work fast. If you ask they will give you cooking recommendations. If you get home and realize you don't know to cook something you got, call them. Their customer service over the phone is great too. I have read many reviews that some people have written and I see a lot of complaints that this butcher is over-priced. I don't believe they are based on the quality of the food. One of the easiest five-star reviews I've ever had to hand out. I was brought in from their Livingsocial/Groupon deal recently. Honestly, whenever I see a business advertise that often with coupon sites, it makes me worried. The only thing that means generally is they are hurting for business and desperate to take a (multiple) one-time hit in profit on the off chance of generating new followers. Or, they're not business savvy, and will shut down like Ultimate Chicken Bistro in Falls Church (never forget). :( Man, I couldn't have been more wrong. I've missed out on so many opportunities to discover this gem over the past 18 months and I've actually gone to the Hard Times Cafe in the same shopping center since 2000. They have a ridiculously good selection of meats. As another fellow mentioned, they have seafood, but they're butchers so expect the price to be a bit more hefty than a fish market. The quality was still on point. Bought a half pound of Yellowfin tuna to make Tuna Poke and Tuna tartare and it turned out perfect. Their cheddar & jalapeno sausages will probably convert anyone you know who is "meh" about sausages, they're that goddamn good. The thing I found intriguing was their packs. They bundle different assortments of ground meats, steaks, sausages like valupaks ranging around 40ish, 80ish and 200+ish dollars. They looked freaking awesome. Now the downside, which is very minor. I found their crab cakes to not be as good as the reviews here on yelp had hyped it up to be. Now, it may be because I'd prefer to just buy jumbo lump crab meat and fashion my own cakes with recipes from some of the better crab-centered restaurants in Maryland's Eastern Shore. Or it could be the fact they used bell peppers which I think is kinda a cheap binder/filler and doesn't go in a crabcake. Either way, I found them to be just good, not great. That's it though. Every complaint I read on Yelp I've found negligible or hard to believe. They were super friendly and accommodating to everyone with the groupon deals (as was expected because for many it's a first impression) but honestly, I came back later sans coupon for a normal shopping trip and they were just as friendly, and helpful. Honestly, coming from the hospitality industry I kinda don't care too much about the front they put up for customers. I'd assume they're mostly butchers who are dedicated to being the best at their craft to give you the best stuff they possibly can. They're like chefs, so I practically expect them to be dicks. Super nice and incredibly helpful staff! My mom who came in with a list of ingredients written only in French and the combination of her strong French accent and lack of perfect English received wonderful service from the boss and his assistants. Several times it appeared they were playing charades but no one appeared annoyed and they were very busy. Personally, the patience shown was enormous and in the end my mother, who lives in DC, will drive all the way to Springfield for this place from now on. I find that their meat is fresh and I tried their lobster tail on Saturday, which was gigantic and wonderfully tender. I highly recommend Springfield Butcher to people who want anything from a huge steak to different cuts of meat from various proteins as well as the best way to cook it. I DO want to give a heads up that you need to grab a ticket number and to pay attention to the numbers being called because the big lines usually move really fast. They regularly offer a groupon deal. If you get two deals, you want to use them separately, otherwise you have to spend over $100 to use both. Also, do not come the day or day before the groupon expires. I've made this mistake a couple of times and there were about 200 people waiting in front of us. My favorite item in the butcher, and the main reason why I keep coming back, is the crab cakes. They're outstanding - best crab cakes around! I usually get 3 crab cakes for my husband and I and we split the 3rd one. The different sausages are also very good. I came to Springfield Butcher the night before a dinner party in an abolute panic. The butcher I had ordered a leg of lamb from completely fell through and I needed to find one! So, after calling ahead, and suffering through southbound 395 Friday night traffic I got there. Oh thank goodness, they had multiple legs so I had nothing to worry about. Now, I'd never ordered/cooked a lamb leg before so I was just kind of going off of what I'd read in the recipe. I used really specific terms like, I want that fancy bone on the end, and is there another bone inside? Newsflash, Jessica, It's a leg. Legs have bones and joints and stuff. The staff behind the counter here were incredibly helpful! Once we figured out exactly what I wanted they had it prepped. The guy taking out the hip bone asked me if I wanted to keep it - I hadn't even thought of that! It made some delicious crock pot lamb bean soup, let me tell you. Once I'd prepped and roasted the lamb for the dinner party, the next day, I carved that baby up. Oh my delicious. This lamb was so good! So tender and flavorful.
