Awesome local spot! Staff is incredibly friendly and they "do it right" which means their meats are hormone / antibiotic free and everything you'd expect when think high quality. I loved the fact I was told you pay for the meat which means you can have it prepped anyway you want without paying extra. There are definitely premade goodies that are more of a heat and eat right from the freezer. I am excited to have a butcher to go to now. The quality at grocery stores, Costco, etc. has gone DOWN. I've been struggling to find a place and the answer is Springfield Butcher! Roasting their bone in chicken breasts as we speak and plan on grilling up some of their sausages. Chris was very fun to chat with and went above and beyond by asking if I needed ice. He double wrapped the cuts very well and there was no spillage. I will definitely be back and I highly recommend.

The employees here really care about their customers and answer any questions you can think of and even give recommendations on how you should cook certain meats I'm a big fan of this place and they sell beef tallow which is nice as that means no seed oils :)

We have been looking for a real butcher since we moved to Arlington. This place checks all the boxes. Great selection of meat, seafood, sauces and more. The staff is great. The shop is clean and bright and packed with meat! Very happy I found this place!

Prime Rib Roast

Nothing like having a local butcher shop, and nothing quite beats the selection and customer service at Springfield Butcher. Whether it's beef, chicken, lamb, pork, crab, shrimp, fish, or a container of lard, they've got what you need. Springfield Butcher also has your holiday needs: Beef Wellingtons, dry-aged prime rib roasts, pies, sides, turduckens, etc. All of it reasonably priced and high quality. If it's not busy, you can go right up to the counter and order. However, if they are busy (which happens around the holidays) then they'll call customers by ticket numbers, and the ticket stubs are conveniently to your left as soon as you walk in the door. I have been pleased with everything I've gotten from Springfield Butcher, but the dry-aged prime rib roast was by far the most beautiful thing. Pro tip: you can buy a prime rib roast from them and they'll dry age it for you on site!

Very pleased with the quality of their meat and with their service. I needed a pork crown roast and they were a huge help. They put it together for me and everything. I'm definitely coming back again. The venison and wild boar sausages we also picked up were delicious. I recommend those as well.

The names are unique, and don't be afraid to ask what things are. The portions are not huge, so you can try different things. This is an owner operated business, so you're likely meet the owner and there and they have been doing this for quite a while. Seating inside is limited, but the outside seating nis now covered. It's great. If you haven't been in a while, come back and try out the new menu.

I'll definitely be back to try some of their other offerings and would absolutely recommend this place if you're in the area. Just a heads up that their hours are a bit limited, but its location right next to a bar makes it a perfect stop for a tasty bite before heading in for happy hour.

They claim to source from local suppliers when possible and their beef is humanely and pasture-raised. They also prepare fresh sausage, weekly. Also available here is food for animals, smoked meats, animal fat for cooking, and grill products. The prices are a bit steep considering the meat is some of the highest quality you can get without having access to a local farm or raising and butchering your own livestock. The customer service is friendly. I do recommend researching and having knowledge of the specific cut of meat you desire before going to this butcher or any butcher for that matter. Butchers have a tendency to recommend alternatives when they are out of a specific cut. Many times they are spot on, but for the seemingly uneducated it can be an opportunity for bad businesses to offload a lesser or expiring cut for as much if not more expensive. On one visit I wanted boneless short rib and the butcher here appropriately recommended Denver cut which is the alternate name for this cut. A novice might not know this. Overall a good experience. I'll visit again when in the area.

Sourcing pasture-raised and grass-fed meats from trusted suppliers. I believe that's why the price is on the higher end.

My friend grew up in Nova, and his favorite KBBQ is Makchang Dodook. He says it's the best for AYCE…read morein terms of quality and price. I've never heard of this spot before, and you typically will not find me in Springfield. However, a few of us made lunch plans this past Good Friday to take advantage of the $29.99 AYCE weekday lunch pricing. We got three rounds of beef brisket (chadol), one thin & thick pork belly (samgyupsal) each, and half an order of large intestine (daechang). The chadol was a little too fatty than I'd like, but it was high quality and comparable to non-AYCE options like Meokja Meokja. I didn't love the thin samgyupsal as much, but the thick version was so meaty and juicy. The intestines were a fatty treat, and I was good with just a couple bites. We had to ask for ssamjang and sesame oil for sauces, which they were generous with giving. Our server was pretty attentive, but we thought it was weird that he cooked the thin samgyupsal and the beef brisket at the same time. As for sides, we asked for lots of them (sadly our corn cheese never came). The fermented soybean stew was strong, but a bit too salty at the end. The egg bomb was fluffy and delicious. They also have ramen (aka shin ramen) which we enjoyed by adding several pieces of chadol and letting it soak in there to get that deep meaty flavor. I enjoyed the kimchi throughout the meal, which was the perfect "not quite fresh, but still crunchy" texture. Overall, we ate to our heart's content. I definitely would be back for more chadol, thick samgypsal, and a bit of daechang in the future. The $30 pricing is a steal for the amount of food we got, but I'd hesitate to pay for the $40 dinner price. I don't eat enough at AYCE spots to get my money's worth, so I would rather spend that $40 at a non-AYCE spot for higher quality cuts like galbi and rib tips.

Service was great and attentive, and the atmosphere is solid for the Springfield area. That said, our hood vent almost came off mid grill, which definitely took away from the experience. Overall, a strong start with great banchan and service, but the BBQ itself did not quite deliver.
