Awesome local spot! Staff is incredibly friendly and they "do it right" which means their meats are hormone / antibiotic free and everything you'd expect when think high quality. I loved the fact I was told you pay for the meat which means you can have it prepped anyway you want without paying extra. There are definitely premade goodies that are more of a heat and eat right from the freezer. I am excited to have a butcher to go to now. The quality at grocery stores, Costco, etc. has gone DOWN. I've been struggling to find a place and the answer is Springfield Butcher! Roasting their bone in chicken breasts as we speak and plan on grilling up some of their sausages. Chris was very fun to chat with and went above and beyond by asking if I needed ice. He double wrapped the cuts very well and there was no spillage. I live in Oakton Va, 17 miles from Springfield (Butcher). They are my butcher so that should tell you something. Every visit is five stars but today is six. I drove the 17 miles and my carpaccio order wasn't ready. Likely my communication problem but the manager stepped up and made all well -- "I will personally deliver the package to you." Folks, first the meats are great. Superb. And that is important. But service and attitude weigh heavily. When I cook a dry aged steak from Springfield Butcher, my family and friends always say "what did you marinade these steaks in, they are amazing". I love replying "salt and pepper", so delicious! We were hosting a family event and were faced with some unusual specific requests. One of our guests was recovering from oral surgery. We explained the situation to Sarah. Being that our event was a week away, she suggested soup. She made a custom blended chicken based soup that was ready the day before our event. Imagine our shock finding this accommodation at a butcher shop. Their display cases of poultry, fish and beef allowed us to complete our selections with ease. Whether it's beef, chicken, lamb, pork, crab, shrimp, fish, or a container of lard, they've got what you need. Springfield Butcher also has your holiday needs: Beef Wellingtons, dry-aged prime rib roasts, pies, sides, turduckens, etc. All of it reasonably priced and high quality. If it's not busy, you can go right up to the counter and order. However, if they are busy (which happens around the holidays) then they'll call customers by ticket numbers, and the ticket stubs are conveniently to your left as soon as you walk in the door. I have been pleased with everything I've gotten from Springfield Butcher, but the dry-aged prime rib roast was by far the most beautiful thing. Visiting family in the area over the holidays and wanted to get to a butcher to get some cuts. I was surprised when I had trouble finding a butcher in the area? I looked up "Butchers near me" on Google and on Yelp. The places I located were grocer type locations and "niche" butchers? Then I found my way to Springfield Butcher! Upon entry I was surprised by the cleanliness and organization of their meat counter and their frozen meat section. I was able to get the cuts of meat that I was looking for, in fact, I located a cut that other "Butchers" in the area were unsure what I was asking for! I do go here sometimes for the best cuts, but without our second freezer anymore, not as often as I used to. HOWEVER, every year for either Christmas or New Years I get a 4-6 bone Prime Rib (depending on the number of people I have over) and they have yet to disappoint. This past weekend, I had a hankering for steak and was delighted to find out that Springfield Butcher has a two inch porterhouse! When we got there, the shop was practicing 5-people maximum in its business and its customers patiently waited outside in line with 6-feet distance social distancing. We did a reverse sear on it and a butter-baste on the steak and it was absolutely phenomenal. It was juicy, bursting with flavor and delivered that scrumptious mouth-feel that comes from a good steak. I also picked up some crab cakes that we will have this weekend. UPDATE August 2021 Hadn't thought about this review in ages until I reposted an excerpt on a FB foodie group and I was contacted by an employee of the Springfield Butcher. He seemed mortified by the review and wanted to connect me with the owner. Short version, owner called me, apologized, sent me a healthy gift certificate and asked me if I would try them again. I recently went, without advertising I was the yelper with a gift certificate, and purchased some filets, bacon, chicken thighs, and chicken breasts. Spent more than double the gift certificate value just to try out their meats. As last time, the service was great. Filets were recently cooked sous vide and kids loved them. Still had silverside on them that I had to trim but the cuts were much much better than my last visit. Boneless chicken thighs were also great. Ate all the bacon and enjoyed it. Chicken breasts are next. Very happy with the effort by the employee and owner to make things right even after well over a year. Ill be back and giving them additional trys in the future. read more

The younger guy behind the counter as well as the older carvers in the back were helpful and friendly. I have been making Beef Wellington for Christmas dinner about 12 years. I've always bought a 10" center cut of tenderloin because it holds up the best. Since moving to NOVA, I've had decent cuts from Whole Foods until they discontinued special orders, which is why I turned to Springfield Butcher. The first year that I placed a special order, (mid-Covid), I was able to purchase a decent cut. For the last two years, the cuts have been been less decent and this year was particularly dismal. Even though I stressed, over and over, that I needed a center cut, I got a folded over, end cut. Yesterday was especially frustrating. I paid about $125 for a 3.3 pound "center-cut". I asked repeatedly if it was a center cut, asked to see it. I don't know if the sales associate faced the folded ends away from my vantage point or swapped out the cut after I examined it, but when I came home I found that it was shreds of an end piece, folded over and trussed up. Needless to say, I cannot make a Welly with the entire cut because it will come apart as soon as I slice into the finished product. I'm left wondering if they hold on to the center cuts for their own pre-prepared Wellies, or do they not pay close attention when there are 30 people waiting in line. Either way, the trip took 90 minutes in all, and $125. I won't be returning here again. If you have a special order, make sure to get a close up view of what they package and watch them pack it up for you. read more

Not only is the selection of meat outstanding and the staff is friendly, I have also had great time talking to other customers while waiting for my turn at the counter. The two items I always get are meatloaf mix, yes I love making meatloaf and bacon with the rind attached. With the bacon you pick the slab from the grab and go refrigerator, take it to the counter and have the butcher slice it to the thickness you want. I wasn't sure if it was me or not. I purchased 2 filet mignon (either 1.5 to 2.0 inch) 6 mos. ago and they were tasteless. 3mos ago, on a grill- still tasteless. So after the last two times i thought I'd give it a chance, again thinking it was me! I 2" filets, and I must say tasteless. I've b going here for years. It can't be me. I've grilled, I've reversed seared, etc., I've tried it all, and still not cool!! I haven't priced them out (with otherplaces), however, I have zero thought of buying here again.
