We stopped into this busy, kitschy place decorated with signs and figures from the American roadside of the mid to late 20th century on a road trip from Denver to the Tucson area. Service was quick and pleasant. Their green chili cheeseburgers are fantastic, as is the spicy red beans side. Dog friendly inside and out. No alcohol served. They have a sizeable stage for live music, and some respected names in the blues genre have played here Tommy Castro and the Painkillers, among many others). Where do you drive to get green chili, salsa, spices, and anything chili? It's Hatch New Mexico. After getting my bags of green and red chili I found Sparky's open. I pulled over and decided to try their self claimed Worlds Famous Green Chili and Cheese Burger. The one pound burger was tasty and the green chili was fresh. The bun used had a crease built into it so you could cut it in half to control it as you took a bite. The atmosphere was old western mixed with an antique museum and backyard garage. Everywhere you looked was an old road sign or an abandoned statue that was salvaged. The booths you sat in were just as old vintage as the signs on the wall. The one I sat in had many miles on it and the springs gave in and I felt every spring. This is one of those places that you stop into to give it a try and soak in the nostalgia but as far as the World Famous Green Chili Cheese Burger I give it a solid score, but not ranked as my top Burger. read more

I really like the vibe of the place. It seems like folks from all different walks of life were eating here, and that's the way it should be. We were here on a Sunday not realizing they are closed Monday Tuesday and Wednesday. If we would have come and they were closed we would have been upset. Tourist trap what nonsense. The entire little town has revitalized itself by capitalizing on their famous chilis. Sparkys is a fun fun place. They are busy but the line goes fast. I had chicken chili. While in Hatch, we had to stop at Sparky's for a Green Chile Cheeseburger. The whole family ordered a burger and potato wedges. We immediately tasted the green chile and it was gooooood. The burger was perfectly good without being too greasy, but greasy enough. The wedges were cooked well and crispy without being soggy. The inside is definitely eclectic. Very interesting decor that makes Sparky's stand out. Our family arrived right when they opened, so I can't speak to long lines. We were able to find a seat and didn't have a wait at all. Recently traveled down to Hatch a few weekends ago for a sack of fresh green chile. Sooooooo, of course I had to stop and eat at Sparky's. Everyone always says, eat at Sparky's, eat at Sparky's. So what did I do? I ate at Sparky's! The place is fun if you have never been. Super eclectic. Filled with all the things. All the signs, all the statues all the knick-knacks. It's a delight. You order in the front, right when you walk in. The menu covers the wall and your order with a cashier sitting right next to it. Then you get your drinks, yourself. Otherwise, they will call your name for your order. The no. 1 (Green Chile Cheeseburger) and no. 7 (Smothered Green Chile Queso) were ordered. We got fries with the no. 1 and the corn chowder with the no. 7. The burger was good, but I loved the smothered patty with queso even better. The corn chowder was, okay, a little runny, or a watery consistency. Woulda been waaaay better had it actually thickened up. There was a live band playing in the main dining room. So that was pretty nice to get some live music during our visit. Didn't try any of the coffee or ice cream, or desserts. So I will have to start with one of those first, next time. read more

Sparky's is a staple in Hatch, so it makes sense to stop by and see what the hype is about. Unfortunately, the food doesn't justify the price. The burgers taste like something off a bulk pack at a neighborhood cookout--forgettable and mediocre at best. The one standout is the chili lemonade, which is genuinely creative and worth trying. If there's live music, the atmosphere can be enjoyable as well. My recommendation: grab a drink, take in the ambience, and then head to one of the other spots in town if you're looking for a meal that's actually memorable. We have been here several times throughout our travels over the last decade plus. It seems to have gone significantly downhill since our last trip. And you can tell, because there are all of the life sized statues, especially of various fast food restaurants. They are all over, like some kids movie, or maybe a horror flick. The burgers are outstanding barbecue tacos with smoked meats were interesting and the queso sauce was fantastic. A little on the expensive side, considering what you got on a combination, but it was very good. No complaints. Service was quick. You order sit down and then they call your number and you retrieve your food yourself. Only thing that could make this business a five is if they straightened out their parking situation we literally walked to four different buildings before we found out where the restaurant was. Evidently, they've moved from one building to the next and have Flo over parking, but there's no direction or signs indicating where the actual restaurant is. Unfortunately, the patio was teeming with flies and ants even before we got our food. Hamburger was just OK, we ordered 2 green chili specials with beans. The price was of $34.00 for 2 medium sized single thin patty burger. The flavor of the burger was good with the grill flavor but it was not $17.00 good. No table service. You order and pick up your own food. Like a McDonald's. If I knew that when I ordered I would not have left a tip. I guess I was hopping for a thicker burger for that price. Ambiance was very fun to see. There was another area where the was a live blues singer. I heard complaints about how loud it was. Many tables were open in that area and I am assuming it was because of the loud music. Wow! What a great place. We stopped here on our way through New Mexico. We were a bit confused at first on where the place was as we thought we parked in the parking lot. They seem to have taken over several nearby buildings to allow for plenty of parking. We even found a place to park with our truck and travel trailer. When you walk in you need to find the end of the line and place your order. It was very busy when we were there so we had to watch for people as they were finishing to grab a table. I was so hungry from our long day of travel the I forgot to take pictures of our food. It was delicious, the cheese sauce on the chicken was wonderful, even had some extra to bring home. Arrived as soon as they opened and there was already a line. It moved along rather quickly. Even though it was early afternoon, the sun's rays were strong. Bring a hat to shield you while you wait. In observing, the line lasted most of the day so I'm glad we got there early. Once you order and pay, you can go inside and choose a seat in the dining area. They will call your name to get your food. The dining area is clean and decorated with antiques galore. I believe the location was featured on American Pickers. I wanted to take a look in there store to see what other treasures they had, but it was closed. We got the combo #3 based on recommendations. I could have gone without the BBQ pork and settled for the green Chile cheeseburger. We also ordered the queso for the fries, which was your average velveeta like cheese, along with a watermelon green Chile lemonade. I have to say that the lemonade was my favorite. This was our second visit to Sparkys. The visit was just as good as we remembered from the first time a few years back. You can't go wrong with their Green Chili Cheeseburgers. That is what most of us went with this trip. My youngest went for the Oinker (cheeseburger with pulled pork). There wasn't anything left as it was all delicious. Of course we also had to have milkshakes too...I had the chocolate/green chili, my husband had the strawberry/red chili, and my daughters had the mango/red chili versions. Again, delicious! You'll have fun checking out all the old signage and other momentous while you are waiting for your food. They often feature live music in one of the rooms and now have more outdoor seating options since COVID. I finally made it. This place had been on my local bucket list for years and this was the weekend I checked it off. After driving an hour and a half, followed by waiting in line another 30 minutes, then another 15 mins for my order, it did not disappoint. The green chile cheeseburger was just as good as they said. The chile con queso dip was spicy and good too. And I loved the Sassy Strawberry Lemonade. It has a nice kick. The service was friendly and prices were reasonable. Been wanting to check this place out for awhile after seeing it on TV and the local reputation it has. Definitely lived up to the hype. Worth the 30 or so minute wait outside in the heat to get to the counter to order. Each bite had the perfect amount of green Chile, cheese and burger. We come to sparkys about once a year to pig out and today was that day!!! We ordered more than we could eat and it was a little expensive but that's ok because spending time with people you love and then enjoying one of the best burgers in the state is priceless! The DGCCB combo is $19 as is. And most plates are about $15. Burgers here are seasoned well cooked to order and delicious. Fountain drinks are endless and the shakes are great! I had a strawberry shake and it was loaded with chunks of it. The sausage bites are ok but I wish Sparkys had a bigger menu to include more menu items like corn, potato salad, bbq meat by the pound and of course some ribs! Consistently delicious food and my favorite green chili burger anywhere! I've been coming here for years and always have a great meal and a good time checking out all of the unique antiques and fun statues. The place is massive so there's never a wait to get a table after you order at the counter. My only suggestion for Sparky's is that I wish they'd bring back the "Almost Famous" 4 oz burger option for those of us that just don't want the big 7oz classic.
