Within the next 10-15 minutes, our food was delivered too. Food: OMG best sushi ever! We tried the cowboy roll, vicios roll and shrimp tempura roll. Cowboy and Vicios rolls I could eat every day! So fresh and so good. We also ordered the guacamole appetizer. I'm very picky on my guacamole and ofter. Have to add more salt but this was perfect! The chips were light, not greasy and freshly made and warm. It also came with homemade salsa which was also delicious and fresh. Atmosphere: the inside is almost its own selfie place. Bathroom, all of the walls, outside, etc. is so well decorated and cute, I have never taken so many pictures in a bathroom The place is much bigger than it appears. Several sections with multiple bars, pool tables, stage for a live band, plenty of tables for seating. Only thing missing is outdoor seating/options. I live 5 hours away so won't likely be able to visit again any time soon but if I am ever in the area, this will be a stop!

I started with one of their house drinks - Curse of the Poppy. It was ok so I switched to a Tequila Sunrise. That was good. The smell coming from the food was very tempting but I had already eaten. Maybe next time.

We ordered the savory bread pudding Benedict and the Bonita's lobster roll both came with hand cut Parmesan truffle fries. Let's start with the bread pudding. Wow, isn't your ordinary bread pudding. If you don't like bread pudding, you will love this one! It starts with a special type bread they make and thick cut bacon is baked all through it. Then it's topped with a poached egg with a special hollandaise sauce. Every bite was full of flavor and I hate I ate it so fast. The lobster roll was so tender and buttery. The roll was fresh a little toasty just enough for a little crunch when you bite. The fries, I never had hand cut fries that taste so good. The fresh Parmesan cheese and truffle oil took them over the top. They really take time to pay attention to detail. If you haven't eaten here yet, you must put this one high on your list. For mains, my partner had the chili citrus glazed duck, and it was cooked to perfection: crispy skin, juicy meat, and that glaze brought such bright, zesty flavors that paired beautifully with the sides. I went with the cobia almondine, and it was one of the best fish dishes I've had--perfectly seared, flaky, with the brown butter, almonds, and charred lemon elevating every bite. The cauliflower purée underneath was silky and delicious. We couldn't stop at just dinner--we shared a few desserts (the variety was tempting!), and everything was spot-on: rich, not too sweet, and beautifully presented. The service was truly amazing--our server was attentive, knowledgeable about the menu, and made great recommendations without being pushy. They really made us feel taken care of. If you're looking for elevated, ingredient-driven food with Southern-meets-French flair in Pensacola, George Bistro is a must-try. We'll definitely be back soon--maybe for brunch next time! It would be nice if diners could counteract these charges for the wait times, less than stellar food...that no one would be tempted to share anyway. Do yourself a favor...go to McGuires downtown.

I don't mind paying for good food, but I think the burger was overpriced at $18 and the drink at $15. I may go back, but not real soon.
