I've taken many cooking classes and this is the first one that has taught me the origins of the food as well as provided an in-depth class about how to use food to better my health. We learned a term called "mother" and it's importance to the process of sourdough break making. I'll let you learn more about that when you take the class. I've already signed up to take the class again because I know I missed things trying to take in all the information.
