However, after stopping…read moreby and asking some questions, I was surprised at the owner's ability to quickly confirm what vegan options there were as well as provide menu-mixing alternatives! Here we ordered three different types burritos: - Potato only (ordered 3x) - Potato with fajita veggies (added spinach -- ordered 2x) - Fajita veggie and spinach (ordered 1x) ...all of these custom burritos were suggestions from the owner, which he said after making them, that they looked REALLY appetizing! Very hefty & satisfying so don't worry you'll get your $4 worth of burrito. He was already out of brisket when I arrived at 12:15 so it must be just as good as the burrito I had. I couldn't tell if it was the beans or the meat that had a slight hint of chili powder or possibly some chorizo in there but it was different and tasty. I will update my review with more stars once I'm able to try the rest of the menu. My only problem is BYT is only open from 7am to 2pm and I work out of town. I will make another attempt later this week to try the brisket. My only recommendation is to get a little old Mexican lady to make some home made tortillas. The torts aren't bad just not home made. A second trailer just like is on the Lovington Highway near Green Meadows Park. I always go for the #15 shrimp fried rice ($14). Their fried rice is the best in town. The amount of shrimp is fairly decent. I came kind of an off hour at close to 3 PM, so the food probably wasn't the freshest, but it was still really tasty. The shrimp is a bit overcooked. Takeout boxes come with an egg roll, fork, napkins, and condiments. Service is always fantastic. The guy who was at this trailer is often at the Pandita Express #2 trailer.
