Walking in you get the vibe that this is going to be a proper barbecue place and they do not disappoint. The dining area has down home antique decorations that give it a nice cozy feel. For food, they have a varied menu with a variety of meats, but pulled pork is my go to so I ordered a sandwich with slaw...it came piled high with enough meat for two meals! The side of barbecue beans was also excellent. Growing up in Knoxville my favorite was always the local chain there, but Small Town will have me "cheating" the next time I'm in the area. The sourdough bread wasn't really sour, it just tasted like regular white bread. Of the sauces, our favorites were Tennessee Red and Spicy mixed together; and we found that by mixing them together, it tasted closer to what we were used to. They still had a bit of an aftertaste that we couldn't quite place. I loved their cute store and their service was amazing! I told them about my egg allergy while ordering and was promised everything would be egg free. We had gotten the bacon burger with sauce that looked very similar to thousand island dressing, and the restaurant made it right by making us a brand new one, while profusely apologizing. We understand that there may be a little bit of cross-contamination, but the dressing on the burger was more than cross-contamination. The lady who took our order told us there was nothing on the burger except for burger, bacon and cheese, and then asked if I wanted lettuce, tomato, onion, and pickles on the side. I asked specifically about the condiments and she said they don't put any condiments on their burgers. The bathrooms and store overall were very clean and very well kept. It felt like good small town America. If it weren't for the egg allergy sauce mixup, they would've gotten four stars.

We had been meaning to try Humble Hog as I'm a huge fan of smoked bologna so I was disappointed to find that is only served at lunch. Our server was attentive and super sweet. She made some solid recommendations and we took her up on them. We opted instead for a few small plates and my wife and I shared the brisket. We opened with lobster hush puppies and burnt ends. The burnt ends were terrific, well seasoned, wonderfully smoked and a fair portion size. The hush puppies lacked lobster but were still tasty and cooked made to order. From there we indulged in the chipotle smoke Mac and cheese, brisket and corn pone. The brisket was terrific and tender and well smoked, the Mac and cheese was SUPERB and definitely had a spicy little kick but the corn pone was awful. I understand that it's essentially cornbread pancakes but there was zero flavor and they were almost cold. I was looking forward to these because you don't see them on the menu many places abut they were not good. Cornbread served like this should be made to order and served hot and fresh. We finished with the banana pudding which was excellent and I think the finish the top with marshmallow fluff that they torch to give it a smoky taste. So when you head down to humble hog go at lunch and try the bologna, I bet it's amazing...and skip the corn pone.

Pulled pork =BLA no smoke flavor I believe it was crockpot pork.Potatoes hard half cold half boiling hot just like microwave potatoes. If this wasn't in such a small town there is no doubt it would not be in business! Take my advice. Do not waste your time or money here. Go to Burger King. The food was so bad and the portions so small I didn't bother taking any pictures. PS: My wife ask the manager why such a change and of course we got the old worn out excuse.(IT's BECAUSE OF COVID) breaking news. That was 6yrs ago! I ordered the two meat plate at the counter with smoked bologna and smoked chicken. My sides were mac and hush puppies and I had tea to drink. Food arrived quickly. The chicken is served sliced (which was a first for me) and it was nice and moist. The bologna had a nice light smoke flavor. The mac was THICK. In a good way. The hush puppies were good, just a little less sweet than I prefer. Tea was on point. This spot is less than 10 minutes from TYS and is absolutely worth a stop on your way too or from the airport.

The Mac and Cheese was definitely Sunday dinner after church deliciousness. The Okra was not frozen but breaded with the same as the onion rings and were crisp full of flavor. The cornbread was a little dense, but really flavorful. Our favorite was the smoked chicken wings which were Smokey tender with crispy skin. They have different sauces and we tried everyone. The sauces all were a different taste, but equally perfect. I guess if I had to pick the best it would have to be their sweet house barbecue sauce. For dessert there are daily new choices and more to come. We chose the rocky road Thai rolled ice-cream which the prepare it for you right before you. We have always enjoyed the Thai rolled ice-cream, usually only finding it at festivals. We have already picked what we will be eating the next time we go.

The slaw tastes like any ole slaw you'd buy at the grocery store. It was good but nothing special. The potato salad wasn't bad but it didn't have very much flavor. Basically tasted like boiled potatoes and mayo. The brisket was probably 70% fat. Each slice was over half fat. Even the pieces that looked like meat, had the texture and taste of fat. The picture that looks like a full plate, that was after I finished eating. I couldn't punish myself anymore than that. I posted a picture of the empty plate (we boxed up the leftovers to give to my mom's chickens) to show how much fat/grease was leftover. The other pictures show dry plates but that wasn't the case for me. 2) plate two (not pictured as it wasn't my meal) was half a rack of ribs, green beans and French fries. The ribs were tough and lacking in flavor. We are used to fall off the bone ribs. The kind where you can pull a rib and it comes out of the meat clean. We had to use a knife and fork to cut the ribs and then chew on them for what felt like forever. They also came out lukewarm and were cold by the third rib. The green beans also lacked flavor and left quite a bit of fat/grease/butter in the bowl after. The fries were also not seasoned at all. TLDR: nothing was seasoned, the food was lukewarm at best and there was enough fat/grease to clog the arteries of even the healthiest person.

Dry of course but had that clear smoky flavor I was hoping everything would have. The brisket was probably the worst brisket I've ever had. While it looked okay, it was bland and flavorless and was totally dry while at the same time pooling in grease (or the water it must have been boiled in). See photo. The sides were all fine. Fried okra, Mac and cheese, and slaw. And I loved the table side barbecue sauce! But even a bath of that couldn't save the meat. I really want to return to support the staff at Smok N Bonz, but I just can't keep going to a barbecue place where I can't eat the meat.
