We have been attempting to come here for several weeks.. they have great hours it just sells out before we can make it over or we decide on a day it's closed. It's a me issue. Very clean restaurant with military theme. The owners and operators are super friendly and kind. We ordered from the menu and found a seat. Self serve drinks which I love. They make all their sauces in house so it was hard to choose when ordering. The bbq was very good and came without sauce so you can add as much as you would like. They indicated a website will be in the works.. which I love knowing a menu before visiting. They also may eventually sell their sauces. Only two things I hope to see from this restaurant -more customer access to sauces. So either a sauce station or bottles at each table. I had a hard time deciding between all the amazing sounding ones. - a white or chalkboard menu board with specials. I found this spot on Yelp looking for a place close to the airport to kill some time, and the ratings definitely match. The service was great, everyone was very friendly and welcoming. The barbecue was really good. The ribs stood out, and while the brisket was just okay, the sauce made up for it. I tried the habanero, honey mustard and ghost pepper sauces and they were super hot but delicious. The mac and cheese was super creamy, and the greens were full of bacon and seasoned just right. Wow you talk about southern hospitality and very welcoming place this is it!!! As a veteran when you walk in I love seeing the support especially a veteran owned business. Pickle fries with Ranch were to die for and ranch seems homemade (my favorite). Super friendly staff, nice little divey place with a family-run feel not far from the airport. My brother and I split the rack of ribs. I was very impressed, both with the flavor and texture. It wasn't fall-off-the-bone but rather bite all the meat clean off the bone, which in my opinion is perfect. We also got some fried okra, which always hits, as well as mac and cheese. Everyone left very happy with their meals. The staff is friendly and helpful. The atmosphere is basic, but in a great way where it's not extravagant or over the top. I was staying nearby at the Home2 suites hotel and needed a place to eat. Saw the reviews and it looked good. My son and I went and it was absolutely amazing. He had a smoked chicken sandwich and pickle fries. He tried the afterburner barbecue sauce, which was absolutely hot! But tasted great. Sides were excellent as was the sausage. I ordered two different sauces (better together and sweet) and they were both very good. The brisket was tender and flavorful, but sliced VERY thin. Three slices came with my order. The ribs were heavily rubbed and very small. I'm not sure if I got the end of the rack, but it came with three ribs and they were underwhelming. This place surprised me. The barbeque was more than adequate, the sides were excellent, and the variety on the menu was impressive. You have to start with the meat for a bbq place. Everything we had (wings, brisket, ribs) was solid to very good. I have to say, the brisket was a tad dry and maybe not fatty/marbled enough, and the ribs were similarly a bit overcooked; neither were as smoky as I prefer (I should say, I'm from Texas but lived all over the place including many years in NC where I tried really hard to appreciate Carolina barbeque...but what I realized I always missed the most was the intense smokiness of great Texas bbq). Anyyway-- I'd happily get and eat any of these meats again if my favorite go-to bbq trucks weren't available. And whereas the trucks have limited availability, this place has good long hours 6 or so days a week, I believe. Back to the sides: mac and cheese was very creamy and rich. Fried pickles were in thin long slices, not wafers, and very crispy and tasty. LOVED them. They had LOTS of different sauces and I was unsure which ones we got or which ones of the several small containers I ended up using. That's a malaise of doing take-out, not eating there. Bam. I don't know which ranks higher in marking a new business success story-- the food or the service-- but this new business earns 5 star in both categories. As frequent travelers to this area, we have a new love. This place was easy to find. Call it luck, call it fate --- we landed TYS and had a hankering for bbq. A quick google search led us to Hatchers. A mile from Knoxville airport, why not?! Finding the location was easy. Walking in: what a surprise they opened YESTERDAY. The greeting we got was a delight in itself. The cashier/order-taker (owner?), was obviously in love with her job and showed us a passion that assured us our decision to come here was the right one, regardless of how the food tasted. We arrived at 8pm - an hour before closing. As we perused the menu, we were told they were out of the brisket and the ribs (not a bad problem for this brand new business to have!!). That left us with the chicken breast on the bbq menu, which we ordered, along with the chicken strips. What sauces do you want? Omg, help me please... and she did! "Better Together" is a marriage of the sweet heat and the vinaigrette - this server's own little invention. Thanks for that! Weloved it! Also, the TN Gold sauce -- worthy of a gold medal. The run-down on the food: the massive bbq chicken breast was a bit dry, but the sauces made it rock. The chicken strips were the bomb (I'll come back just for these perfectly breaded strips!) and both sauces made them even better. Top them off with beers from a nearby locall brewery (red ale) and we were set for a food coma that certainly did set in by the closing bell. The Bottom Line: go here. Try everything. Support local business. Period. (You won't be disappointed.). We'll be back to try the brisket for sure. Keep up the good work, the genuine love and the good food you passionately serve up!
