They have tasting machines, which they stock about 20 different wines available for a "sip" (1 ounce pour), a 2oz and glass pour. They rotate these wines regularly and you get a card that you can put in the machine to pour it. Then you just pay on your tab after! We went to a wine bar really just because we were excited about the build your own charcuterie board, but it was a great time even for people totally ignorant to wine. My friend doesn't actually drink alcohol but thankfully they have a small list of mocktails and nonalcoholic drinks, and I know nothing about wines except that I usually only like roses, which thankfully they had a flight of! Emerson, our server, did a great job explaining the different notes of the rose options, and helping us pick a fourth cheese option as we were building our board. Now on to the charcuterie, what we really came here for. Delicious! The only thing we left any bit of was the complimentary crasins and a bit of the horseradish cheddar. We inhaled the Brie, regular goat cheese, and mustard & ale cheddar, plus the prosciutto and salami. It also came with figs and Carr's crackers; again we only left some crasins and the bit of horseradish cheese, everything else was phenomenal. I would come back in a heartbeat just for the BYOCB situation. We also checked out some of the truffle options, but ended up opting to try those some other time. Great little spot for snacks and and glass of wine. This is an amazing spot for a casual date night or girls night without too much chaos associated too it. It's a self serve OR full service location. We sat at a table and had full service. Our waitress was lovely despite the two of us being slow drinkers and really just there to check the place out and catch up. We didn't feel rushed, the environment wasn't too loud, a live singer ended up showing up and he was incredible. They don't have a full food menu but our charcuterie board was a decent size and had us grazing on snacks all afternoon. This was a hassle with 3rd Friday and what appeared to be one register. They offer happy hour from 4pm-6pm. Wines are 25% off and I believe the charcuterie boards were on discount. I ordered the Villa Pozzi, which is a Moscato from Sicily, Italy. It has aromas of fresh figs, apricot, and orange blossoms. It was apparently the only sweet wine on the menu or at the self pour wine station. That was disappointing. I also ordered a Build Your Own Charcuterie Board. For cheese I ordered the Point Reyes Tomatruffle ($5) and the D'Affinois Le Fromager Brie ($5) For meat I ordered the Prosciutto ($12) and the Smoking Goose Rabbit and Pork Cheek Terrine ($7). I also ordered the seasoned olive medley ($4), the spinach dip ($6), and the honey ($1.75). I was hoping the Terrine would be more like a Pate texture but it was firmer. After wanting to try Sips for a little while...wow was I wrong. From the initial entry to this wine bar it was nothing but bad. First of all the smell needs to be attended to. Who wants to smell a wine with the odor of sewage in the background. After being seated we were greeted by a very condescending woman by who I believe was Erin. Her rudeness and attitude was not what you would like to receive from a restaurant owner/server. What a lovely wine bar with something really cool; they have wine coolers with little spouts. You can pick your wine and the size of pouring and it will fill your glass. The choices are "Sip" (perfect for tasting), "Goulp" (a bigger tasting size and "Glass" (which is a full glass). The selection there is great as well and chances frequently. Got to taste wine from Greece, Spain, France, US, Australia, Portugal and Hungary. The service is also super nice and so this makes for a fun visit. Unfortunately, Erin the owner is not customer service oriented and needs to stay way behind the scenes. Mat was pleasant to deal with and has compassion, which plays a huge role in customer service. My daughter has her event at SIPS wine bar in Safety Harbor, and I will say, since the moment I walked into the door the Owner Erin was a bit aggressive and unwelcoming to the items we had brought, which were one small balloon piece, fruits, 8 small center pieces, cream cheese and bagels, which after re-reading the agreement where all acceptable. Throughout the event the vibe from Erin was unpleasant and very unwelcoming, almost like if we were all a nuisance and she didn't want us there. At one point as the event was winding down my mother in law wanted more white wine and the allotted wines that we purchased had run out, so I went to the bar and asked for more white wine, immediately Erin jumps and says "you have to pay for that" to my response, I am more than happy to and pay for all additional wine other guest may want. Mat, swooped in and said, I have this, don't worry about it. As I said earlier, Mat needs to be the Face and Erin needs to be back of house hidden in an office. Although everyone has the right to visit different locations throughout Safety Harbor, I do recommend that if you walk into Sips Wine Bar and Erin is in the front, walk out, don't stay, you wont have a nice experience with her at the helm. Our son and daughter-in-law's Baby Shower was held at Sips Wine Bar in Safety Harbor. This decision proved to be regrettable and a huge mistake. Upon arrival, Erin, the owner immediately informed us that we needed to depart the premises by 2 pm, because she was open to the public by 3pm, despite the contract saying we had an additional 30 minutes for cleanup. Although the event brochure she provided stated decorations were "welcomed," we were repeatedly told by Erin that table decorations were not permitted. This was merely the beginning; a family member who requires a service dog for medical reasons (partially blind) arrived and Erin immediately refused entry to the dog until she was informed and reminded of federal law and legal requirement. She then told us the individual needs to remain outside with the dog in the heat to prevent dog hair on her velvet chairs, crazy I know, and I'm not making this stuff up. At this juncture, my pregnant daughter-in-law became upset and began to cry due to Erin's behavior. This was my daughters-in-law's day to celebrate the coming of her first-born baby, and Erin made her feel terrible. Although the contract and email correspondence with Erin had confirmed that additional food was permissible, she frowned upon it when she saw the small cake and fruits that we brought. Erin also declined to provide plates and silverware, which were contractually agreed upon, because we had brought a cake and fruits, and the plates were not for cake and fruits. Furthermore, according to our contract and the brochure she provides, a 30-minute grace period for cleanup is allocated at no charge. Erin prematurely ended the party to allow for cleanup and departure before 2 pm, which was not stipulated in our contract, yes, she pretty much told us to leave! Our event was scheduled for 3 hours, with an additional hour before for setup and 30 minutes for cleanup. Lastly, upon reviewing the receipt, it was discovered that we were charged $450 for a non-existent extra hour. Sips Wine Bar is NOT recommended, as they will sip all your money and emotion out of you! Erin's hosting and ownership skills are found to be severely lacking customer service and compassion! read more

Parking can be tough to find if you don't come early, there are really only a few spots immediately on the street out front but those of you aware of Safety Harbor should be well aware of the parking situation. Those not familiar: 99% of parking will be parallel parking. The wine bar has a very chill vibe, there aren't many tables but it sure gets packed. They have behind the bar wines and wines on tap. The wines on tap operate by using a card that you're given. You insert the chip, it tells you how much you've already spent & gives you the option of a sip, gulp, or glass. The sips cost varies from just over a dollar to around $10.00 and gives you either a half ounce or ounce. The $10 price tag was attached to a very expensive red wine that sells for around $300 per bottle. Definitely go during happy hour (4-6pm) because they have some amazing deals! read more

I had a gift card from about 8 months ago which they said never expires, I go to use it and she says it's been used some date in the middle of the week in January. I physically showed her I was at work the day that card was used and the owner did nothing to accommodate. We never used the gift card and the owner did absolutely nothing to remedy the situation. I got to rate high end wines during happy hour and I enjoyed every last drop! The charcuterie board were hands down!!! We went here after we ate a late lunch and can I tell you I wanted to eat again???!!!!??? It's hard to resist good cheese when you are enjoying great wines! The atmosphere is cozy for two but also large enough to big groups! I love the credit card system to select your wine ours and how many ounces! The best part was you don't have to guess how much a pour is because it is digitally listed above the wine spout! I do like how they organized the wines by the type and blend. Love the glasses they served our wine in. I definitely want them :-) . They had live music that added to the atmosphere.
